(Critical) Observed four cases of hot dogs at 46f in a cooler with blocked air flow for an unknown amount of time. Potentially hazardous food that is to be cold shall be held at 41f or below. To correct discard the noted food into the garbage. Corrected: person in charge discarded noted items into the garbage

(Critical) Observed a chemical bottle without a label. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. (pf) to correct provide the noted bottle with the common name of the chemical stored within. Corrected: person in charge provided the proper label on the bottle

(Critical) Observed cooking spray stored with chemicals in the kitchen. Poisonous or toxic material shall be stored so they can not contaminate food, equipment, utensils, linens, and single-service and single-use articles by: (a) separating the poisonous or toxic material by spacing or partitioning; (p) and (b) locating the poisonous or toxic material in an area that is not above food, equipment, utensils, linens, and single-service and single-use articles. This paragraph does not apply to equipment and utensil cleaners and sanitizers that are stored in warewashing areas for availability and convenience if the materials are stored to prevent contamination of food, equipment, utensils, linens, and single-service and single-use articles. (pf) mark the open date plus six days on the noted food item. Corrected by putting the correct date mark on the noted food

Found spray bottle of sanitizer with no level of sanitizing, test strip did not change color at all. Found that bulk storage bottle of sanitizer may have been left over from last year. Corrected - old sanitiazer solution was discarded and new solution made to the correct sanitizing level of 50 -100 ppm with new product.

Found thermocouple to not be calibrated. Corrected - metal stem thermometer is available and calibrated. This thermometer will be used until the thermocouple can be calibrated or replaced
