(Critical) Found time/temperature control for safety (tcs) food- ham 57°F, turkey 59°F, chicken 60°F, and beef 57°F in the right 2 door sectional reach in cooler. Pic corrected by discarding tcs food, and has called for repair. Pic has been instructed not to use this cooler, until repaired/replaced to hold tcs food at 41°F. Found tcs food numerous containers of flavored pancake mix 61°F to 64°F in the central 2 door sectional reach in cooler. Pic states employees may have left these pancake mixes out at room temperature during lunch and later placed them back in the cooler, as other items in cooler were at 41°F. Pic corrected by discarding all pancake mixes and has been instructed to monitor and ensure employee are placing pancake mix back into cooler to maintain tcs food at 41°F. ,

Found several wet containers stacked wet on the clean storage shelves. To correct allow containers to air dry prior to storing.

Found the faucet on the right side of the wait station/food plating area loose. To correct properly resecure faucet to handsink.

Found a butter wrapper possibly left after butter melted in a container on the cooking line steam table. Pic corrected by removing butter wrapper and reminded staff not to melt butter in it's wrapper.

Found the tiled floor in numerous areas of the kitchen damaged with chipped and missing tile. Pic states floor will be addressed in this current remodeling project. To correct repair/replace tiled floor to be durable, smooth and cleanable.

Found numerous round plastic food storage containers with deep scratches on clean storage shelves. Found several square plastic food storage containers in the prep top cooler warped. To correct replace food storage containers as surfaces should be smooth and cleanable.

Found the dumpsters full of construction debris from redmodeling and areas around dumpster area and surrounding with construction debris. To correct increase pickups and keep dumpster areas clean.

Found the entire kitchen floor (under equipment, edges and corners) soiled with accumulation of debris. Found the ceiling air vent covers in the kitchen soiled with dusty build up. To correct thoroughly clean floors and ceiling areas and keep clean.

Found the exterior surfaces of kitchen equipment on the cooking line soiled. Found the under side edge of the counter above food holding area of the kitchen line soiled with build up and accumulation. Found the bottom of the 3 door prep top cooler on the wait station area soiled with pooling water. To correct clean all noted areas and clean on a more frequent schedule.

Pic corrected by placing all soiled utensils in the dishwashing area to be re-washed, and has been instructed to monitor and ensure employees are properly washing dishes and checking utensils before placing items on the clean utensil storage shelf. ,

(Critical) Found time/temperature control for safety (tcs) food, chicken 45°F, beef 45°F, and ham 45°F in the bottom portion of the right 2 door sectional reach in cooler. Pic temporarily corrected by relocating tcs food to another working cooler, and noted door was not properly closing/sealing. Pic has been instructed not to use this cooler to hold tcs food until repaired/replaced to hold tcs food at 41°F or lower. Found tcs food, sour cream 48°F, and whipped cream 45°F in an ice bath cold hold well in the wait station. Pic corrected by discarding these items, and has been instructed to ensure ice bath completely surrounds tcs food and holds tcs food at 41°F or lower. ,

(Critical) Found 2 pans of white gravy 55°F, which were prepared this morning not properly cooled. Pic corrected by discarding white gravy, and was reminded to cool tcs food in shallow pans in ice baths, and to cool from 135°F to 70°F in 2 hours, and then from 70°F to 41°F in 4 hours. ,

(Critical) Found 2 dented cans of cranberry juice on the ready to use can rack. Pic corrected by placing cans in the designated storage area for return to supplier. Pic has been instructed to ensure employees are checking cans for dents when receiving, stocking, and before using cans. ,

Found the bottom section of the right 2 door sectional reach in cooler not closing/sealing properly and not hold tcs food at 41°F. To correct repair cooler to seal properly and hold tcs food at 41°F or lower. Found the door gaskets of several coolers loose, torn or cracked. To correct repair/replace door gaskets.

Observed employee working on the cooking line not wearing hat. To correct provide hats and remind employees to wear them.

Observed flies in the right floor drain of the waitstation by the pop machine. To correct keep areas clean and dry, in good repair, and continue fly control measures.

Found several coolers without thermometers. To correct provide internal hanging thermometers in all coolers.

Found the interior of the range/oven on the cooking line soiled with build up and accumulation. Found the toaster and waffle maker soiled with build up and food debris. To correct clean all noted areas and clean on a more frequent schedule.

(Critical) Found the drain line of the left ice cream dipper well below the rim of the floor drain. Pic temporarily corrected by pushing the drain line up and re-securing drain to table leg providing air gap. To correct secure drain line to a more solid surface and ensure drain line has an air gap of at least 1 inch from the drain line and the rim of the floor drain. Andwill not fall off. ,

(Critical) Found time/temperature control for safety (tcs) food, ham 44°F, diced tomatoes 44°F and chicken 45°F in the 2 door sectional reach in cooler. Pic temporarily corrected by moving tcs food to another working cooler and has called for repair. To correct repair/replace cooler to hold tcs food at 41°F or lower. Pic has been instructed to monitor and ensure tcs food is held at 41°F or lower. ,

Asked employee how shake blender is cleaned. Employee stated a cup of hot water is held under blender mixing device and rinsed, and no other procedures are taken. To correct re-train employees on properly cleaning blender mixing device, that is rinsing is allowed between uses, and that at least every 4 hours the blending device is washed, rinsed, and sanitized.

Found the waffle maker on the shelf on the cooking line soiled with accumulation. To correct monitor and ensure employees area cleaning waffle maker at least every day.

Found 3 opened gallons of pancake syrup without lids on the shelf in the wait station. To correct cover gallons with original caps or provide other means to protect food. Found the interior of the microwave oven on the cooking line soiled with accumulation. Found the shelves and surrounding areas of the microwave ovens soiled with spills and accumulation. Found 12 rusty cans of peaches on the ready to use can rack. Pic states these cans are to be returned to supplier for credit. Pic corrected by moving these cans to storage room shelf for temporary storage and was instructed to label these cans as do not use, return to supplier for credit.

Found one of the lids of the dumpster missing. To correct repair lid of dumpster.

Observed employee rinsing off syrup pitchers in the wait station handsink. To correct re-train employees to rinse pitchers in the dishwashing areas. Found garbage can and empty container in front of the kitchen cooking area handsink. To correct relocate items and keep handsink accessible at all times.

Found the floor (under equipment, edges and corners) on the cooking line soiled with accumulation. Found the walls and sides of cooking equipment on the cooking line soiled with build up. To correct thoroughly clean noted areas, and clean on a more frequent schedule.

Asked employee how he cleans slicer, employee states he breaks down slicer, takes removable parts to the dish washing machine, and for the slicer base and blade he rinses with hot water, and then wipes down with sanitizer. Corrected by educating employee to wash slicer base and blade with soapy water, rinse, and then wipe down with sanitizer. Pic has been instructed to monitor and retrain employee on properly cleaning slicer.

Found the freezer door gaskets and interior bottoms soiled with accumulation of debris. Observed splash and accumulation around the back splash of the cooking hood. Found the edge of the counter top above the grills soiled with grease. To correct clean as soon as possible, and clean on a more frequent schedule.

Observed several flies around the left floor drain receptacle. To correct keep areas clean and dry, in good repair, and continue pest control treatments.

Found the tomato slicer on the prep table shelf soiled with tomato skin and pieces. To correct follow manufacturers directions clean food contact surfaces of slicer, tomato slicer, and ice machine as soon as possible, and clean on a schedule to preclude accumulation. Found the exterior doors and door handles of coolers on the cooking line soiled. Found the sides of the fryer hood on the cooking line soiled with greasy build up. To correct clean cooler doors, and door handles, and hood, and clean on a more frequent schedule.

Pic stated that the dishwashing machine was not working, not being used, and a service call had been placed. Found dishwashing machine chemical dispenser alarm flashing. To correct have dishwashing machine repaired, and use the 3 compartment sink, to wash, rinse, and sanitize dishes until dishwashing machine is repaired and working properly.

Found the lid of dumpster left open. To correct keep lids closed.

Found a hose with spray nozzle (shutoff valve) connected to mop sink faucet with an atmospheric vacuum breaker. Pic corrected by disconnecting hose from mop sink faucet and was reminded to monitor that staff are removing hose after cleaning. Found the drain line which was strapped to leg of counter on top of floor drain cover, with out air gap. Pic corrected by having maintenance re-strap drain line to leg of counter providing an air gap.
