Pic stated that queso and soup were removed from ice bath and placed in wic less than 20 minutes ago. Pic stated correct cooling procedures and proper cooling methods (shallow pans, ice bath, uncover pans) but it appears staff did not follow those procedures today. Pic corrected by removing queso and soup from wic and rapidly cooling in ice bath at time of inspection. Pic also educated staff on proper cooling methods at time of inspection. Violation corrected

Observed interior of microwave oven on prep line with an accumulation of food debris. To correct, please clean now and on a more frequent schedule

Observed floors under fryers on cook line with a heavy accumulation of grease and food debris. To correct, please clean now and on a more frequent schedule. , observed end of drain lines in floor drain at server station (by iced tea station) with a heavy accumulation of mold and debris. To correct, please clean now and on a more frequent schedule.

Observed packages of raw chicken and seafood thawing at room temperature on counter in back kitchen area. Internal food temperature of chicken and seafood was below 32f. All phf must be thawed under refrigeration or under cool running water to prevent the accumulation of bacteria

Observed non-food contact surfaces (under conveyor belt) of tabletop conveyor oven in cooking area with a heavy accumulation of food debris. To correct, please clean now and on a more frequent schedule

Observed clean tableware stored under soap dispenser at handsink in dishwashing area. All clean utensils and tableware must be stored in a clean, dry area and not exposed to potential sources of contamination. To correct, please relocate tableware to approved location out of handsink splash zone as soon as possible

Observed wet mop stored in mop sink near dishwashing area. All mops must be hung up after use to allow for proper air drying

(Critical) Some refrigerated, ready-to-eat, potentially hazardous food items found with expired discard dates. These food items shall be consumed or discarded within the time period indicated. Corrected at time of inspection by discarding food items with expired discard dates. Please monitor these food items daily and discard as needed.

Base coving tile missing at entrance to upstairs walk-in-cooler creating a gap at bottom corner of wic door. Please replace tile to eliminate gap and to provide smooth, easily cleanable surface in this area

(Critical) Improper cooling method being used for cooling (1) cooked artichoke dip and (2) cooked onions. Corrected at time of inspection (1) separated artichoke dip into two shallow pans, stirred and left uncovered; found with approximately 4-5 inches of product in a covered metal pan at 63°F (sides of pan) to 90°F (in center); cooked approximately 1 hour prior to discovering in wic per food employee; checked again in approximately 30 minutes all product found at 58°F - 60°F. (2) spread small third pan of cooked onions on sheet tray uncovered in wic; found in third pan with cover in pizza reach-in-cooler. Please continue to monitor the temperture to assure these food items cool from 135°F to 70°F within 2 hours and from 135°F to 41°F within 6 hours. Facility does use cooling logs

(Critical) (1) no sanitizer present at automatic warewashing machine in kitchen. (2) no sanitizer present at automatic warewashing machine at the bar. Corrected at time of inspection by (1) ecolab repair person changing sanitizer line; may have been small hole in the line per repair person. Chlorine sanitizer now provided at proper concentration. (2) cleaning interior dishmachine at the bar. Chlorine sanitizer now provided at proper concentration. In addition pic and ecolab rep noted lemon seeds, pieces of mussel shells, mint leaves, etc. Get stuck in the spray rinse arm. This should be checked daily.
