Found a household crock pot being used to hold soup. To correct replace crock pot with a commercial grade hot holding unit.
Found the top and sides of the cooking hood soiled with build up. Found the hood filters of the pizza oven and cooking hood soiled with build up. To correct have hood and hood filters properly cleaned.
(Critical) Found the edges along the slicer blade soiled with accumulation of debris. Found the can opener blade soiled with accumulation and build up. Found a hand mixer soiled with oily residual. To correct follow manufacturers directions and wash, rinse and sanitize food contact surfaces of equipment and utensils. Pic states he will clean items as soon as possible. ,
(Critical) Found opened, unsliced portions of lunchmeat ( turkey, roast beef, salami, and ham) and an opened package of feta cheese without 7 day (day opened + 6 days) datemark on a shelf in the walk in cooler. Pic corrected by providing datemarks for lunchmeat, and discarded salami and feta cheese. Pic has been instructed to monitor and ensure employees are datemarking appropriate items. ,
Found light in the cooking hood not working. To correct repair/replace light.
Found the coving in the back corner by the door loose. To correct re-secure coving to floor wall junction
Found a dented can on shelf not labeled. To correct label designated dented can section with sign, example dented cans return to supplier for credit.
Found the floor on the cooking line soiled with accumulation of debris. To correct thoroughly clean floor and keep clean.
Found the bottom of the mixing bowl surface showing wear. Found the sink stoppers of the 3 compartment sink broken. To correct repair/replace mixing bowl and sink stoppers.
(Critical) Found time/temperature control for safety (tcs) food, pizza by the slice 120°F in the hot holding unit on the top of the display cooler. Pic corrected by discarding pizza and has been instructed not to use hot holding unit until repaired/replaced to hold tcs food at 135°F or above.
(Critical) Found no chorine sanitizer in the sanitzing bucket in the prep area. Pic corrected by adding chlorine to sanitizing bucket and verified proper level with chlorine test kit.
(Critical) Found time/temperature control for safety (tcs) food, a pan of moldy meatballs in the bottom of the 3 door pizza prep top cooler. Pic corrected by discarding meatballs, and has been instructed to monitor and ensure food is rotated, and discarded as needed.
Found no antichoking poster on the kitchen wall. To correct provide and post antichoking poster on kitchen wall.
Found an absorbent type liner lining the shelves of the display cooler. To correct remove absorbent type liner.
Found the bottom shelf of utensil shelf not at least 6 inches above the floor. To correct raise shelf to at least 6 inches above the floor.
Found counter top pizza hot holding unit not holding tcs food, pizza at 135°F or above. To correct repair/replace hot holding unit to hold tcs food at 135°F or above.
Found several baking pans soiled with food debris on the shelf under the pizza oven. To correct clean baking pans as manufacturer specifies or at least every 24 hours.
