(Critical) Observed all rte grilled cheese sandwiches and grilled chicken tender sandwiches in hot holding units on serve line with internal food temperatures of 100-115f. All sandwiches were made 5-6 minutes ago per staff. Staff stated correct cooking temperatures and hot holding units were functioning properly. Appears sandwiches may have been left out for a longer time during the prep process. All phf must be hot held at 135f (140f per chartwell standards) or more at all times. Once prepped, all rte hot sandwiches and burgers should be placed in pre-heated hot holding cabinet before service to maintain proper temps. Food temperatures were taken during lunch and several rte sandwiches were already served. Pic corrected by discarding remaining sandwiches at time of inspection. Violation corrected.

(Critical) Observed several insert pans of freshly sliced rte deli meats, sliced cooked chicken, sliced tomatoes, cut lettuce and sliced/shredded cheeses in sandwich station prep cooler and middle serve line areas with internal food temperatures of 53-60f. All above mentioned food items were prepped less than an hour ago per pic. All coolers were holding proper temperature (41f or below) at time of inspection. All phf must be cold held at 41f or below at all times. May need to rapidly cool all rte foods after morning prep before placing in serve line coolers. (Critical) Observed pan of rte mozzarella sticks in upright warmer next to pretzel serve area with an internal food temperature of 67f. Mozz. Sticks were removed from freezer and placed in warmer less than 10 minutes ago per staff. Please remember that hot holding units are designed to hold food temps, not for cooking or reheating. All phf must be reheated to 165f before placing in hot holding unit. To correct, please reheat mozz. Sticks in oven before placing into hot holding unit. Pic corrected by reheating mozz. Observed pans of self serve rte nacho chips, pans of rte lettuce and onions (for wrapped rte hamburgers), and bins of rte apples on serve lines and near cash registers with no protection. Except for shelled nuts and whole raw fruits that are intended for peeling or washing by the consumer before consumption (such as bananas or oranges), food on display shall be protected from contamination by the use of appropriate food guards, display cases or other effective means. Facility already has several sneeze guards in place on serve lines. To correct, please relocate all rte foods items (which are self serve) under sneeze guards as soon as possible and during all meal operations

To correct schedule service to repair or replace the temperature measuring device at the dishwashing machine to indicate actual hot water temperatures being achieved by the dishwashing machine during operation cycles.
