A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under # 4-703. 11(c) shall meet the criteria specified under # 7-204. 11 sanitizers, criteria, shall be used in accordance with the epa-registered label use instructions to correct repair the noted machine to sanitize at 50-100ppm. ,
Observed the bar cutting board with heavy staining and grooves. Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. To correct replace the noted cutting board.
Observed the following with a debris build up: 1. Bottom stainless steel shelf by the hood area. 2. Chemical bucket lids. Non food-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. To correct clean the noted items and maintain them free of build up.
(Critical) Observed the following food contact surfaces soiled with a build up of food debris: 1. Can opener blade. 2. Interior top of the manual juicer. 3. Multiple utensils. 4. Waffle irons. Equipment food-contact surfaces and utensils shall be cleaned: (1) before each use with a different type of raw animal food such as beef, fish, lamb, pork, or poultry; (p) (2) each time there is a change from working with raw foods to working with ready-to-eat foods; (p) (3) between uses with raw fruits and vegetables and with potentially hazardous food (time/temperature control for safety food); (p) (4) before using or storing a food temperature measuring device; (p) and (5) at any time during the operation when contamination may have occurred. (p) correct by washing, rinsing and sanitizing the noted items. Corrected: person in charge had the noted items washed, rinsed and sanitized.
Observed the floor under the bar 3 compartment sink to have a build up of debris around the and on the floor rim of the floor drain. Physical facilities shall be cleaned as often as necessary to keep them clean. Correct by cleaning the noted area at a frequency that maintains the area clean and free of debris build up.
(Critical) Used a chlorine test kit and found the dishwashing machine not chlorine sanitizing dishes. Pic corrected by calling for repair, dishwashing machine was repaired during inspection and used test kit to verify dishwashing machine was sanitzing dishes. Observed grease on the the sides of the cooking hood on the main level kitchen. Found the back splash of the range on the main level kitchen soiled with splash and build up. Found the door gaskets and counter top of the the 1 door worktop cooler in the coffee bar soiled. To correct thoroughly clean noted areas and keep clean.
Found the floor under equipment, edges and corners in the main level kitchen soiled. Found the stairs leading to the basement and edges of the basement floor soiled. To correct thoroughly clean stairs and floor and keep clean.
