(Critical) Observed food employee with fingernail polish working with exposed food items. A food employee may not wear fingernail polish or artificial fingernails when working with exposed food. Corrected at time of inspection by discussing with employee. Employee washed hands and put on gloves for next pizza order. She will remove nailpolish or wear gloves when working with exposed food. (Critical) Both digital thermometers have dead batteries. You need to have working digital themometers in your facility at all times. Manager said they don't use them for taking temps, just to puncture bags. Staff need to be using thermometers to assure coolers are holding foods at 41*f or less and that wash water temp is 110*f or more. Owners need to train staff on this and hold them accountable to monitor temps. By 8/24/13 you need to get new batteries and take a pic of both thermometers and send me a picture via e-mail. (Critical) Paper towels were not stocked at the kitchen handsink. Staff need to always stock it when they run out. Always have back up handsink supplies. Had to wait on truck delivery today for more paper towels! corrected by stocking paper towels.
The hood filters and area around them have a dust build up. Also, the pan racks by the dishsinks are dirty. You need to put both of these areas on a more frequent cleaning schedule!
