(Critical) When asked how often pizza slicers are cleaned and sanitized, i was told at the end of the night. Food contact utensils need to be washed, rinsed and sanitized every 4 hours. If you have extra slicers, you can change them out every 4 hours. Corrected by doing such.

I showed dylan how to use them properly when setting up the 3 comp sink for dishwashing. Corrected through education and using them. The owner is responsible for properly training managers in food safety code compliance.

(Critical) 2 chemical spray bottles were hung on the clean storage ware rack above the 3 comp sink and not where the designated chemical storage rack is that is labelled for that. Staff need to be held accountable to store things in safe locations. Corrected by storing in designated area.

(Critical) I found 2 spray bottles of bleach sanitizer in excess of 200ppm. Must keep between 100-200ppm by using test papers to verify. I showed antonio how to make up solution in a one gallon bucket and transfer over to spray bottles. Corrected.

(Critical) You do not have a consistent date marking system in place. The deli meats and feta cheese must be marked with the use by dates!! add 6 days to day of prep and put that date on containers that store these items. Corrected by dating properly.

The existing certified manager now longer is working at this store. Within 90 days you must have a current full time employee that is food safety manager certified. E-mail or fax copy of certificate to me within 90 days. Left business card with address/numbers on it.

Y0u are missing all the exhaust filters on the feed side of your pizza oven. Have filters installed within 10 days.

You need to replace the missing exhaust hood filter in your pizza oven. Also, repair the condensation leak in the one door upright freezer.

The chlorine test papers you have are old and discolored which give false readings. Replace with new ones and use them often.
