(Critical) Some potentially hazardous food items found hot holding on cart at improper temperature (< 135°F) from improper reheating. Critical corrected: at time of inspection reheated beef brisket with braising liquid to >165°F on stove top in kitchen and placed back into hot holding unit at cart to maintain at a minimum 135°F. Pic attempted to reheat macaroni and cheese in stove to >165°F but product was ruined. Facility usually runs out of mac & cheese. Will discontinue with any mac & cheese leftovers.

Some single-service utensils found stored improperly at cart. Please store single-service utensils so handles facing customer to prevent potential contamination of food-contact end

Handwash sink at cart not easily accessible for handwashing. Corrected at time of inspection by relocating planter

(1) please store clean dishes and equipment inverted on shelving unit in kitchen to prevent potential contamination. (2) please invert single-service containers at cart and store on clean surface; currently stored on ledge behind cart. (3) some single-service items stored improperly on floor in rear auxilliary storage area. Please store all single-service items on shelving a minimum 6 inches above the floor. Owner is planning on providing proper shelving units for storage in the near future

Sanitizer concentration in spray bottle at cart too high. Please provide quaternary ammonium at proper concentration per manufacturer's label use instructions

Please label working containers of food items in food lockers in kitchen
