(Critical) I observed cooked off whole potatoes in a pot in the 2 door upright cooler at 73*f after cooling for 4 hours. Hot foods must cool from 135*f to 70*f in 2 hours or less. You are ordered not to be cooling foods until you obtain a walk in cooler. It is ok to temporarily cool very small amounts in your upright freezer until you get the walk in cooler. Corrected by discarding the potatoes.
Pots are being stored within the splash zone of the handsink. Move the storage rack outside of the splash zone.
(Critical) I observed an opened gallon of milk and grated cheese stored below raw meats in both upright coolers. Staff need to be very aware not to store any ready to eat foods/beverages next to or below raw meats. Corrected by moving items above raw meats.
Observed cooking pots and boxes of carry out containers stored on the floor. You need to get some dunnage racks with 6" clearance to floor to store things on in your facility.
Observed an uncovered coffee cup in the service area. Staff need to be drinking from cups with lids if in the back of the house or service line.
(Critical) Found the sausage gravy at 108*f and the breakfast potatoes at 130*f on the stove. Heat was turned off. You need to hold hot items at 135*f or hotter at all times. You need to keep your hot items on the steam table!!! corrected by discarding and using steam tables from now on!
