(Critical) It appears the sanitizer pump is not dispensing enough chlorine into the rinse water. Contact your service company and have them come out to adjust the run time on the pump to provide at least 50 ppm chlorine

(Critical) Observed three chemical bottles (2 separate locations) to be stored with/among clean equipment and single service items. Corrected by relocating these chemicals to the chemical storage area and/or with other chemicals on a bottom shelf

Observed several food containers on the kitchen storage shelves stored upright. Within 10 days either invert these containers, store them in a covered container or a bag for protection

(Critical) The chlorine test papers are discolored from either moisture or high heat. Provide a new test kit for your chlorine sanitizer. ,

(Critical) Walk in cooler: observed a box full of old, moldy food (mainly bread and pies). Corrected by discarding. Ensure staff are rotating food and inspecting the cooler for spoiled foods.

Observed two wet mops resting in the bottom of the mop sink. Provide a better hanging system to allow the mops to air dry while suspended above the mop sink

Observed some spilled foods on three of the four range top spill trays. Corrected by removing the spilled food

Observed two of the four metal stem food thermometers to be reading too cold (by +/- 4-5 degrees). Corrected by re-calibrating

Again observed a dial type air thermometer in the walk-in cooler that was inaccurate. This thermometer was reading 14f even though the products in the cooler were at 38/39f. Corrected by removing this thermometer from the cooler. Another accurate thermometer is provided inside (a red alcohol type thermometer)

Observed the walk in cooler to be operating at a slightly elevated temperature. As soon as possible schedule a contractor to adjust the cooling system as needed to maintain foods at 41f or below

Please obtain and post an anti-choking poster in the facility for quick reference

Observed the food trap screen on the dish washing machine drain to still have food scraps in it. Provide a reminder sign or written operating instructions for staff that includes the removal and cleaning of this screen

The dial type air thermometer in the walk in cooler was reading 20f, however, foods are not frozen. Provide a replacement air thermometer that is accurate
