(Critical) Observed the following food contact surfaces to be dirty with grime and food debris: 1. The can opener 2. The food slicer. Food slicer was used earlier in the day for prep of raw meat. Then stored without cleaning. Each item shall be cleaned as outlined above. During the inspection the pic cleaned each item.
Observed filters on the cook line ventilation hood with heavy build up of grease. Grease is almost 1/2" thick in the area where it exits the filter tray and drips into the collection pan. The collection pan is not overflowing. Correct by cleaning now and on a more frequent basis to prevent the accumulation of grease.
(Critical) Observed 5 bloated cans of hoisin sauce and two dented cans of bamboo stored on the shelf with other ready to use cans. Item corrected during the inspection by relocating the damaged cans to another separate storage area with other distressed cans for credit. Item corrected
(Critical) Observed small black ants along the wall behind the three compartment sink and near the mop sink. Correct by calling a licensed pest control company qualified to complete pest control in a food service establishment. A follow up inspection will be completed within 10 days. ,
Observed the outside of several pieces of equipment with an accumulation of grease and food debris. These include: 1. Door handles of the reach in portion of the prep top cooler at the main cook line. 2. The door of the walk in cooler. 3. The sides of the bbq roaster 4. The sides below the cooking surfaces of the wok table. 5. The wire shelf adjacent to the prep top cooler across from the main cook line. Correct by cleaning now and on a more frequent basis to prevent the accumulation of grease and food debris
Observed the floor of the walk in cooler with an accumulation of food debris and grime. Correct by cleaning now and on a more frequent basis
Near the soup hot holding area observed a house made wood cutting board used for cutting vegetables. The wood appears to be soft spruce-pine-fir plywood. Stop using this cutting board. Replace with an approved material cutting board.
At the prep area observed food worker placing food on sheet trays on a wheeled 55 gal trash can to assist in moving the heavy trays. The chicken never contacted the trash can liner. The trash can liner is clean to sight and touch. Pic was told to stop this practice immediately and to utilize the available sheet rack or other acceptable method. Later during the inspection movement of chicken on sheets trays was observed not involving the trash can. Item corrected
(Critical) In the rear prep area at the two bulk sugar storage bins observed a heavy accumulation of grime on the inside of the storage container. Pic corrected during inspection by cleaning each container to remove the accumulation of grime. Item corrected

Observed food worker transporting house sliced frozen chicken wrapped in heavy plastic wrap on sheet trays between the prep area and the walk in freezer. The worker was placing the sheet trays on a wheeled 55 gal trash can to assist in moving the heavy trays. Observed the following equipment in need of cleaning now: 1. Faucet handles of both hand washing sinks 2. Control handles and shelf under wok range 3. Door handles of reach in cooler 4. Door handles of non functioning cooler used for storage correct by cleaning now and on a more frequent basis.
(Critical) Observed at the can storage area three unopened hoisin sauce cans to be bloated on the top and bottom lid. A fourth can was observed leaking on the side. Bloated cans indicate the presence of pathogenic bacterial growth within the can. Cans must inspected for damage during delivery, storage, and before use. Any damaged or bloated cans must not be used for food preparation and should be discarded. Pic corrected by discarding cans in the outside refuse dumpster

(Critical) Observed sented chlorox product not intended for use to sanitize washed, rinsed utensils, to correct use an approved epa registered sanitizing agent with label indicating directions for proper use to sanitize washed, rinsed, utensils. Pic corrected this item by purchasing approved sanitizer as required for use during this routine inspection. Pic understands how to use chemical test strips to verify proper concentration of sanitizing solution for utensil sanitization

Observed light bulbs in the exhaust ventilation hood to be not operating to provide light over cooking area equipment and employee work station. To correct service light fixtures located in the exhaust hood to provide adequate lighting at employee work areas as required
Observed the three compartment sink with only one sink stopper, and plastic caps being used to hold water in the sink compartments. To correct obtain proper sink compartment drain stoppers to properly hold water in the sink compartments for proper washing, rinsing and sanitizing of utensils as required
Observed bulk flour bin with container without a handle placed in contact with food in bin, to correct use a proper scoop with handle extended up out of food product during storage.
Observed several wiping cloths in the kitchen placed on couter equipment without being submerged into a sanitizing solution. To correct should store wet wiping cloths in an approved sanitizing solution between uses as required
Observed the exhaust hood filters with accumulation of grease debris. To correct schedule more frequent cleaning of the hood filters to prevent potential drip contamination to foods being cooked under the filters
Observed dented can on storage at kichen canned food storage shelf. This item was observed to be corrected during this routine inspection by the (pic) person-in-charge. Pic corrected this item by properly separating dented can to a designated area of the kitchen for dented cans away from ready to use canned food products
(Critical) Observed food employee not washing their hands when circumstances required handwashing. Critical corrected: at time of inspection interrupted food employee to wash their hands properly before preparing food. Food employee washed hands properly. Arrived at facilty before opening, entered facility with employee, the employees that arrived later did wash their hands properly. Hands are particularly important in transmitting pathogens, please wash your hands when required
Please provide 3 sink stoppers for 3-compartment sink. Faciltiy currently using plastic jug lids to plug sinks
