(Critical) Observed staff washing and rinsing hands in food prep sink in back kitchen area. Staff need to be washing hands in designated handsinks only. To correct, please educate all staff as needed. Temporarily corrected by educating pic and on-site staff at time of inspection. I will check this item at follow up inspection to ensure compliance. ,

(Critical) Observed no test strips in facility to measure sanitizer concentration in 3 compt sink. To correct, need to obtain proper test strips as soon as possible. I will check this item at follow up inspection. Correct within 10 days. Please note: this violation has been cited at 2 consecutive routine inspections. As a result, a risk control plan needs to be developed and submitted to health dept. For review. If violation is cited at next inspections, you will be required to attend an administrative conference at the washtenaw county health dept. For enforcement actions. ,

(Critical) Observed no paper towels at any handsink (prep area and 3 compt sink area) in kitchen (employees are currently using a common towel). All handsinks must be stocked with soap and paper towels at all times for proper employee handwashing. Pic corrected by providing disposable paper towels at both handsinks in kitchen at time of inspection. Violation corrected. Observed single service forks stored improperly in front counter area. Food contact portion of all forks are pointing up and exposed to potential sources of contamination (employee/customer hands). To correct, please store all utensils and so the food contact portion of utensil is pointing down (and the handles are up).

Observed staff utilizing and storing round pan in ice machine (pan is laying on top of ice). Bowls and pans are not approved for ice scoops as they are a source of potential contamination (from employee hands). All utensils need to be stored in a clean, dry area and not exposed to sources of potential contamination. To correct, please obtain proper ice scoop and stored in approved location

Mislabeled chemical bottle was labeled "water only" but was in fact glass cleaner. All chemicals/toxics must be properly labeled with product common name at times for proper identification. Observed interior of victory upright cooler in prep area with an accumulation of sticky food debris. To correct, please clean now and on a more frequent schedule

Observed staff storing clean knives in between pieces of equipment on prep line. All utensils must be stored in a clean, dry place and not exposed to possible sources of contamination. To correct, please install knife rack or place knives in approved location as needed.

Observed handle on del-field cooler in prep area broken and repaired with duct tape. Duct tape is not an approved repair surface as it can accumulate bacteria. To correct, please repair broken door handle so all surfaces are smooth and cleanable

Observed wooden utensil rack above 3 compt sink in dishwashing area not sealed to wall and rack has bare wood edges. To correct, please seal rack to wall and paint all surfaces as soon as possible to prevent water and mold from collecting behind rack

(Critical) Observed all pop nozzles and pop nozzle barrels on pop machine in dining area soiled with mold and debris. All pop nozzles and pop machine components must be washed, rinsed and sanitized every 24 hours and must be clean to sight and touch. Observed handle on del-field upright cooler in prep area broken leaving a sharp edge. To correct, need to repair/replace broken door handle as soon as possible so all surfaces are smooth and cleanable

Observed brooms and cleaning supplies stored next to and leaning against shelf were clean knives are being stored. All food and clean utensils must be protected from sources of contamination at all times. To correct, need to relocate brooms and cleaning supplies or move knives to approved location as soon as possible (recommend obtaining knife rack)
