These food items shall be consumed within the date mark time period noted on label. If not consumed within this time period these food items shall be discarded. Corrected at time of inspection by discarding spinach dip, salsa (made in house) and cocktail sauce (made in house) found with expired discard dates. Staff is doing a great job of date marking, please remember to monitor all date marked food items for expired discard dates

(1) floor drain in prep kitchen cooking equipment side not taking water. Observed some stagnant water on floor under speed rack. All other floor drains in kitchen accepting water. Roto-rooter has been notified; will be on site today. Please repair and maintain in good repair. (2) observed leak under left compartment of 2 compartment sink at salad station. Leak is causing water build up on floor in this area. Please repair and maintain in good repair. (3) handwash sink drain line for prep kitchen handwash sink does not terminate over floor drain. Please extend drain line so it terminates properly over floor drain

(Critical) Observed improperly cooled broccoli cheddar soup at improper temperature in wic that was prepared yesterday. Cooked and cooled potentially hazardous food shall cool within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F. Corrected at time of inspection by discarding cambro of soup found at 44°F; several other food items in wic found at 36°F - 37°F

(Critical) Improper cooling method in use for cooling thick soups. Cooked and cooled potentially hazardous food shall cool from 135°F to 70°F within 2 hours and from 135°F to 41°F within a total of 6 hours using one or more of the following methods listed. Corrected at time of inspection by discussing cooling methods at length. This facility has several ice wands, large ice machine to fill ice wands, several shallow metal pans and large wic with adequate space. Provided pic with cooling chart; please fax when complete for all food items that are cooked and cooled in your facility. Include the cooling method as part of the recipe for all phf items. Salads are made to order from this cold well, using ice as the only means to maintain the food at proper temperature. Ice cannot be used as a substitute for refrigeration. This cold well is designed so that only the bottom of the pan can contact the ice, the food on top will never maintain at proper temperature. Please replace with refrigeration unit asap; fax copy of spec sheet. Until then all salad ingredients placed on cart in wic; salads will be made to order in the wic. (2) discarded bulk milk found at 46°F in silver king milk cooler. Please repair or replace this unit so that milk maintains at 41°F or below at all times in this unit. ,

(4) walls in some areas in poor repair including but not limited to wall in middle section of kitchen on the far left side, the walls in the bulk pop storage room including floor/wall juncture and floor/wall juncture under ice bins at bar (please eliminate raw wood). (Critical) Observed facility not sanitizing dishware properly as dishmachine did not achieve a utensil surface temperature of at least 160f as measured with heat tape (rinse temperature was only 150f). All soups and gravy were prepared yesterday per staff. All phf must be cooled from 135f to 70f within 2 hours and from 70f to 41f or below within a total of 6 hours. Staff need to be utilizing shallower pans and ice baths/ice wands before placing hot soups in wic. Pic corrected by discarding both soups and gravy at time of inspection. Violation corrected

All raw animal products must be stored below and away from all rte foods at all times to prevent possible cross contamination. Pic corrected by relocating eggs to lower shelf at time of inspection. (Critical) Espresso machine in bar area has been moved. Drain line for machine now discharges into a plastic bucket in cabinet under machine. All clear water discharges for food equipment must have a proper and permanent air gap on drain line for proper backflow prevention (buckets are not approved for this use). (Critical) Observed the following areas in need of cleaning: blender cup in bar area (blade to cap interface) with an accumulation of sticky debris. Blender was not disassembled after last use, bread pan in prep area with an accumulation of sticky/oily food debris (pan not cleaned after last use). All food contact surfaces of equipment must be washed, rinsed and sanitized after every use and must be clean to sight and touch. (Critical) Observed non-food employee (front desk person) come into kitchen and scoop several rte nacho chips (from bulk chip bin in prep area) with bare hands and began eating them as they exited kitchen. Bare hand contact with rte foods is prohibited. Need to utilize proper utensils and plastic gloves as required. Also, non food employees do not belong in the kitchen and cannot be handling (and/or eating) food on the prep line that is for your customers. Please remember that improper handwashing and poor employee hygiene are the leading causes of foodborne illness transmission.
