Pic corrected by discarding rte, tcs food passed it's datemark, and has been instructed to monitor and ensure rte, tcs food is datemarked and items passed datemark are discarded.

Found the floor under equipment, edges and corners in the kitchen, waitstation, and bar soiled with accumulation of debris. Found the wall behind cooking equipment soiled with build up and accumulation. To correct thoroughly clean floor and wall, and clean on a more frequent schedule.

Found the spray nozzles of the dishwashing machine clogged with debris. To correct follow manufacturer's directions and clean spray nozzles.

Found the interiors of coolers soiled with accumulation of debris. Found the lids/covers on food containers in the prep top coolers soiled with food debris. Found the sides of cooking equipment on the cooking line soiled with build up and accumulation. Found the bottom of the glass chiller in the bar soiled with accumulation. Found the shelves of the pop storage cabinet in the bar soiled with spills and accumulation. To correct clean all noted areas and clean on a more frequent schedule.

Found the 1 door worktop cooler in the dining room waitstation holding non tcs food, orange juice and cream requiring no refrigeration at 53°F. Pic states no milk/tcs food is stored in this cooler. To correct repair/replace cooler to hold tcs food at 41°F, if in the future you wish to store tcs food in this cooler. Found the ventilation system/left cooking hood not working. Pic states they are working on the cooking hood. To correct repair cooking hood to work as designed.

Found several cases of food stored on the floor of the walk in freezer. To correct store food on shelves at least 6 inches off the floor in the walk in freezer.

Found left lid of dumpster left in open postion. To correct keep dumpster closed at all times.

(Critical) On follow up inspection found a new quat dispenser installed in the 3 compartment sink, which mixes water and quat at proper concentration, and used a test kit to verify it was dispensing quat at 200 ppm, within manufacturer's recommended range of 150 to 400 ppm. Violation corrected.

(Critical) Asked employee to demonstrate how sanitizing buckets are filled/mixed according to posted directions on quat dispenser( 1 push per bucket) in the 3 compartment sink area, and found sanitizer solution in bucket below manufacturer's recommended range of 150 to 400 ppm. Employee temporarily corrected by pushing sanitizer dispenser multiple times and had to use test kit to verify proper concentration. To correct either have quat dispenser set to dispense sanitizer at proper concentration per directions or provide means for sanitizer to be dispensed at proper concentration. ,

Found the tiled floor in front of the walk in cooler door cracked and uneven. To correct repair tiled floor to be smooth and cleanable.

Found hot tcs food sausage 114°F on top of a grate in a pan, hash browns 115°F in a double pan, eggs 127°F in a double plan in the self service hot holding unit.
