(Critical) Observed inconsistent system for datemarking rte foods in kitchen. Some staff are writing discard dates and some are writing prep/open dates on datemarking labels. All potentially hazardous rte foods must be labeled with a 7 day discard date (day 1 is prep/open date). To correct, please educate all staff on proper datemarking procedures and provide clear and consistent datemark labels on all rte foods as needed. Pic corrected by providing correct dates on all rte foods in kitchen at time of inspection. Violation corrected

Observed interior of steamer and rethermalizer in cooking area with an accumulation of scale and debris. To correct, please clean now and on a more frequent schedule

(Critical) Observed 2 sheet pans of cooked rte chicken nuggets in hot holding cabinet at end of cook line with internal food temperatures of 115-125f (hot holding unit temp was turned down too low). All phf must be hot held at 135f or more at all times. Chicken has been in unit less than 30 minutes so pic corrected by reheating all chicken to 165f and turning up thermostat on hot holding cabinet at time of inspection. Violation corrected.

Observed single service forks, spoons and knives all jumbled together in utensil bins in dining room. All tableware and utensils must be stored so the handles are all facing the same direction so the food contact portion of utensil is protected from sources of potential contamination (from customer/kid hands). To correct, please organize all tableware bins in dining room as soon as possible
