Handink on the prep line found with whisk in it. Handsink must be accessible for routine handwashing. Do not store anything in the sink basin and keep sink supplied with paper towels and soap for routine handwashing. Use this sink as the designated handsink for the prep area. It is closer to the prep line than the other handsink.

The thermometer in the small white cooler is inaccurate. Replace thermometer in order to monitor the temperature for this unit,

The non food contact surfaces of the ice machine need cleaning. , shelving above the steamer needs cleaning, the steamer top needs cleaning. Clean now and place on a more frequent cleaning schedule.

The oven and the microwave are in need of cleaning. Clean now and place on a more frequent cleaning schedule.

There is domestic equipment in the facility including microwaves, coolers, etc. Replace with commercial equipment when in need of repair.

(Critical) The diced ham was found at 51 degrees f on top of the prep unit. The top of the prep unit does not hold ph foods at 41 degrees f or above. As discussed pic will not use the unit on top and will cover it over. This was an addition after purchase that has never worked properly. Corrected by discarding diced ham at time of inspection

The ovens are in need of cleaning. Clean now and place on a more frequent cleaning schedule.

Fryer cabinets are in need of cleaning. Clean now and place on a more frequent cleaning schedule.

Top of prep unit does not hold ph foods at 41 degrees f or below. Ham diced found at 51 degrees f on top of unit. Keep all ph foods in bottom of unit and do not use top. Cover over as discussed.
