(Critical) Inadequate hot water temperature at kitchen handwash sink and restroom handwash sink; found at 75°F. Hot water shall be provided at a minimum 100°F at all handwash sinks. Not corrected. Per maintenance person, the recirculating pump needs to be replaced; replacement scheduled for monday. Hot water >135°F at faucet at 3-comp sink and 2-comp sink in kitchen

(Critical) Shredded cheese on self-serve line found at improper temperature. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Corrected at time of inspection by discarding shredded cheese found at 62°F. Pan of shredded cheese in the last hot holding well; well was not turned on. In future if using the hot holding well to store a potentially hazardous food you may use an ice bath to help maintain the food item at proper temperature. At time of this inspection relocated the bagged carrots in the refrigerated section of self-serve line to replace the shredded cheese; obtained a clean pan and filled with shredded cheese and placed where carrots were in the cold section to maintain at proper temperature. Other food items in refrigerated section maintaining below 41°F

(Critical) (1) observed student contact ready-to-eat food item at the salad bar with bare hands then place food item back into food container. Consumer self-service operations shall be monitored by food employees trained in safe operating procedures. (2) utensils at salad bar missing from some food items as the students go through the service line they are misplaced. Consumer self-service operations for ready-to-eat food items shall be provided with a utensil that protects the food from potential contamination. Corrected at time of inspection by (1) discarding pita bread that was handled by student. Food employee serving hot food is also responsible for monitoring salad bar. Discussed with pic, she will try to do a better job of monitoring the salad bar and will do some training with the students. (2) replacing utentsils into each food container for proper dispensing. It appears the salad bar area could use some additional oversight

Gap observed at bottom of left exit door near cash register. Please provide door sweep to eliminate the gap

Handle area some cabinet drawers and top ledge of same cabinets in need of cleaning. Please clean now and as often as necessary to maintain in clean condition
