2 of the doors for the 3 door reach in cooler on the line do not close easily due to an o-bolt that was installed to lock the coolers. You are going to neeed to come up with another way to lock your cooler doors that does not impede the closing of the doors.

(Critical) Raw bacon was found stored with cooked deli meats, creating a cross contamination potential. Never store raw animal product with ready to eat foods. Furthermore, you are not approved to cook any raw meats at this location. You can cook the bacon at your licensed full service kitchen at the club and bring it over here. Corrected by removing the bacon from the facility.

(Critical) I observed the unscliced portion of deli turkey expired and the queso beans and cheese expired. Staff need to be auditing dates and discarding foods as they expire. Corrected by discarding.

(Critical) Foods were overstocked in the pans on the cold rail of the sandwich cooler, causing the turkey i tested to be at 50*f. Must be holding 41*f or less. You need to not fill product over the fill lines in the pan. Corrected by discarding out of temp product and not overfilling pans

You need to clean the exhaust hood filters more frequently.

Please remember to clean out the interior of the microwave out in the lunchroom more frequently.

The panini press is being used to cook pre-cooked chicken and burgers, creating excessive amounts of smoke and odor. The panini press will need to be re-located under the exhaust hood canopy within by november 22, 2013. I will be back to re-inspect this then.

Repeat violation 2 times in a row. You need to have a door sweep installed on the back exterior door to eliminate the gap where pests can enter. I will be back on 11/22/13 to assure this has been done.

(Critical) I found cooked grilled cheese sandwiches and pizza sitting on a speedrack in the kitchen at temps of 82*f and 105*f. These items need to be maintained at 135*f or hotter. Keep in holding oven and check temps of food to assure holding at 135*f or hotter. Corrected by following the above procedure and discarding food.

(Critical) Nacho cheese was in portion cups but not held at 135*f or hotter or 41*f or colder. You need to keep in the cooler or obtain a nacho cheese dispenser to disdense product above 135*f. Have a plan for this when i come back for the follow-up inspection in 2 weeks. Cheese was discarded.

(Critical) All procuct in the upright bev aire cooler in the back room was found at 50-51*f. Must be holding at 41*f or less. Product was discarded and service tech is here now working on it. I need you to be doing temperature checks of all your cooler on a daily basis to assure holding 41*f or less. Be sure to temp foods on cold rails too. I will be back in 2 weeks to verify unit is working properly.

The 2 deep fryers, flat top grill, pannini press and range stove are not under proper ventilation. You need to get the mechanical plans into al hauck withing 10 days.

Wiping cloths need to be kept in sanitizer solutions between uses not out on counters or kept on staff aprons.

You need to keep paper towels stocked within the dispenser, not keep a roll on the prep table. Corrected by getting key and restocking.

I observed flies on the serve line. You need to have staff keep the door closed so flies cannot get into your kitchen.

Your metal stemmed thermometer was not accurate. It's reading low. You need to be calibrating your thermometers often. I would highly recommend using a digital thermometer as they are much more accurate and hold calibration.

(Critical) Hot dogs did not reach an internal cooking temperature of >135*f before serving. I found hot dogs at 124*f to 133*f. Staff must be temping foods to be sure they are cooked to proper temperatures. Corrected by further cooking to above 135*f.

(Critical) I observed items in the main sandwich prep cooler at temps of 44* to 49*. Must be holding product 41*f or colder at all times. Deli meats, cheeses and tuna salads on top rail found at 45-49*f. Items that have been in the bottom protion of this unit overnight found at 44* to 45*f. All phf's were not served for this lunch period and discarded after lunch rush ended. Do not use this cooler until it is repaired and confirmed it is holding 41*f or less. Call me for re-inspection.

I observed a box of soup bowls on the floor in the dry storage room. Keep at least 6" off the floor.
