Health Report - 08/07/2012 (2 critical incident(s))

(Critical) Observed facility not properly sanitizing dishware and utensils at time of inspection as i measured 0ppm of chlorine in dishmachine. Upon further investigation, discovered that dishmachine has no sanitizer chemical hooked up to machine (has soap and 2 rinse buckets, but no sanitizer). Pic changed one of the rinse buckets to bleach at time of inspection, but dishmachine still did not sanitize properly (50-100ppm of chlorine bleach as required). Could see chemical in tube not getting to dishmachine. Ecolab called at time of inspection. Ecolab arrived and repaired dishmachine at time of inspection. Dishmachine now sanitizing at 100ppm. Critical corrected. Will need to rewash and sanitize all dishware and utensils. Also, will need to educate staff on proper warewashing and sanitizing procedures (including test strip use)

(Critical) Observed 2. 5 gallon container of rte sliced tomatoes on prep counter with an internal food temperature of 58-60f. Tomatoes have been on counter less than an hour per pic. Tomatoes were being used for a catering order this morning, but was not returned to cooler after use. All phf must be cold held at 41f or below at all times. Pic corrected by returning sliced tomatoes to wic at time of inspection. Critical corrected. , observed several rte sliced deli sandwiches (turkey, ham, tuna salad) on speed rack in prep area with an internal food temperature of 70-76f. Pic stated that sandwiches are for a catering order and have been out for 1-1. 5 hours. 1 person was boxing +/- 300 pre-packaged lunches at time of inspection. As stated above, all phf must be cold held at 41f or below at all times. Will need to keep phf in cooler longer (while non-hazardous food boxed) and have more staff assemble these bigger orders so food does not stay in temperature danger zone. Corrected by rapidly cooling sandwiches at time of inspection. Critical corrected. Note: pic stated that catering orders are not transported in coolers or refrigerated truck and are not placed in temperature control when they arrive at event. This transporting procedure is not recommended and not approved as food cannot maintain 41f and may be in temperature danger zone for unknown lengths of time.

Observed several floors in kitchen in need of cleaning: *wif floor (accumulation of food debris), *baking area and cooking area floor (accumulation of food debris) *upstairs and basement dry storage areas (accumulation of debris), *under equipment in prep areas (accumulation of food debris), *under 3 compt sink and dishmachine (accumulation of dirt, mold and debris). To correct, please clean all these areas now and on a more frequent schedule
