All three coolers are down. Two coolers the jordon and the display case are unplugged. The sub zero cooler is malfunctioning and ambient air temperature is 58 degrees f. All units are ordered out of service for the storage of potentially hazardous foods. The sub zero unit does not have any potentially hazardous foods at the present time. Until the unit(s) are repaired and functioning and capable of holding ph foods at 41 degrees f or below, you will be limited to serving prepared foods from a licensed facility that are delivered immediately before service such as pizza or subs. Once the cooler(s) are prepared you may use the unit to store potentially hazardous foods and go back to serving the foods you were previously serving such as chicken, beef and salad, provided by food gatherers.
The coolers in the kitchen are not functioning. Repair if possible if not you must replace domestic equipment with commercial nsf approved coolers.
