Found tubs of potatoes stored on the floor in the walk in cooler. To correct store food on shelves at least 6 inches off the floor.

Found the floor under equipment, edges and corners on the cooking line and prep area soiled with accumulation of debris and build up. To correct clean as soon as possible, and clean on a more frequent schedule.

Found the 2 door prep top cooler in the cooking/prep area not holding tcs food at 41°F. To correct repair/replace cooler to hold tcs food at 41°F or lower.

Found a cooked stockpot of soup at 125°F on the range top with range turned off. Pic states soup was finished about an hour ago, and corrected by placing stockpot of soup in an ice bath to start rapid cooling. Pic was reminded that tcs food must be cooled from 135°F to 70°F in 2 hours, and then from 70°F to 41°F in 4 hours.

Found the floor under the cooking line soiled with heavy grease build up and accumulation. Found the floor (under equipment, edges and corners) thorough out facility soiled with accumulation of debris and build up. Found the walls and ceiling in the prep area soiled. To correct thoroughly clean ceiling, walls and floors and clean on a schedule to preclude accumulation.

Found a tub of cooked potatoes on the floor of the storage room. Pic corrected by placing potatoes on lower shelf in the walk in cooler.

(Critical) Observed the quat sanitizer to be mixed way too strong (500 ppm +). Corrected by diluting to 200 ppm

(Critical) Observed the cook with an open glass of soda on the shelf above the prep cooler on the line. Corrected by placing the glass in a dirty dish buss tub. He was aware of the storage requirements for employee drinks

(Critical) The dish washing machine is not providing chlorine during the rinse cycle due to a hole in the siphon tube from the chlorine bucket to the pump (also observed some crystals of chlorine in the lines). Contact your dish washing repair technician to replace the lines and verify the unit is properly sanitizing

(Critical) Observed the dish washing employee put away clean dishes while wearing the same gloves he used to handle dirty dishes. Corrected by the employee removing the gloves and washing his hands

Observed several wet wiping cloths cook line and back prep kitchen stored on the counter/cutting board. Please keep these wiping towels in a solution of sanitizer between uses to prevent bacterial growth

1) observed the two ice transfer pails to be stored upright in the back kitchen. Please store these pails inverted to allow moisture to drain out and to prevent debris accumulation. 2) observed a tall stack of unused coffee filters stored in a plastic container at the server station. Please keep your filters either in a container with a cover or stored in a plastic bag for protection

The following items are in need of cleaning now and more frequently in the future: 1) the interior of the ice machine and ice bin, and 2) the mounting bases for the fountain soda diffusers and dispensing spouts. Obtain a bottle brush (+/-1/4" diameter) to thoroughly scrub these surfaces

Ensure staff use the available test papers to verify the quat sanitizer is at 200 ppm

The walk in cooler was operating at a slightly elevated temperature. The owner adjusted it to a colder setting during the inspection. Monitor this unit to ensure it maintains foods at 41f or below

Reestablish the drain line air gap for the ice machine drain lines. The cable ties used previously have snapped. Consider using more heavy duty cable ties to strap up the pipes

Observed: 1) the door gaskets on the cook line prep cooler to be torn. Please provide replacement gaskets. 2) the soap dispenser at the dish washing area leaks--provide a replacement dispenser

(Critical) Observed a cook preparing a salad and adding toppings with bare hands. Corrected by having a discussion with the individual and by having staff utilize single use gloves for handling rte foods

(Critical) Observed a container of tomato paste and two containers of cabbage sauce in the walk in cooler to be moldy. Corrected by discarding. In the future, please ensure foods are being prepared in appropriate amounts based on sales, and that they are being inspected frequently and purged as needed. Corrected by discarding

(Critical) Observed the following rte foods with out date marks: feta cheese, cabbage rolls, cole slaw, whole milk and chocolate milk. Temporarily corrected by providing use-by dates based upon when the foods were opened/prepared

Daylight was observed under the back delivery door. Please provide a replacement door sweep for the bottom of the door

Observed no paper towels provided in the dispenser at the end of the line by the beverage dispensers and the buss tubs for dirty dishes. Please provide paper towel for your staff to dry their hands

Observed the walk in cooler shelves to have mold growth on them. Please clean these shelves now and more frequently in the future

1) please re-establish the drain line air gaps for the ice machine and bin by securing them from above with a cable tie. 2) provide a valve on the steam table drain line to facilitate draining and cleaning of the steam table (currently a compression plug is used)

Observed no door latch on the walk in cooler. Please provide a latch to keep the cold air in the cooler
