(Critical) Observed cooked ham in upright hot box in prep area with an internal food temperature of 102-109f. Pic stated that ham was thoroughly cooked then stored in hot box 1 hour at most. Hot box was functioning correctly at time of inspection. All phf must be hot held at 135f or more at all times. Please be sure that hot box is pre-heated before placing phf into unit. Pic corrected by reheating ham to 165f and returning food to hot box. Critical corrected.

Observed handsink in serve line area being used as dump sink. Heavy amount of food debris in handsink drain. All handsinks are to be used for handwashing only. Please dump food and other debris into proper sink (in this case, a food prep or 3 compt sink)

Observed no soap at handsink in serve line area. All handsinks must be supplied with an adequate supply of soap and paper towels at all times for proper employee handwashing

Observed several sliding drawer tracks under grill in serve line area soiled with grease and debris. To correct, please clean now and on a more frequent schedule.

(Critical) Observed food employee sitting on prep counter in front prep area drinking pop with twist off cap. Sitting on a food prep counter is not sanitary and is prohibited in a licensed kitchen. All food employees shall eat and drink in designated areas where contamination of food or clean equipment cannot occur. Also, food employees must drink from containers that cannot potentially contaminate their hands. Twist off pop bottles may result in potential contamination. If wanting to keep drinks in kitchen, employees must utilize cups with lids and straws. Corrected by educating employees on proper areas to eat and drink, employee hygiene and foodborne illness risk factors. Critical corrected

(Critical) Observed case of sterno stored above clean pans on shelf in dry storage area. Also observed bottle of windex hanging on clean knife rack in prep area. All cleaners and chemicals must be stored below and away from food, equipment and single service items at all times to prevent contamination. Pic corrected by relocating windex to chemical storage area and relocating box of sterno to bottom shelf in dry storage area. Critical corrected.

Observed excessive scale on interior of dishwashing machine. To correct, please clean now and on a more frequent schedule

Observed floors in wic and wif with an accumulation of debris. To correct, please sweep and mop now and on a more frequent schedule

Observed 2 cases of bottled beverages stored on floor in hot water heater/utility room. All food and beverages must be stored in a protected manner and stored at least 6 inches off of ground to protect from sources of contamination

Observed no chlorine bleach test strips in facility. Please provide as soon as possible
