(Critical) Observed individual portions of cottage cheese with a date mark of october 10, 2011 on this routine inspection on 9/23/2011. The date exceeds 7 days. To correct this item you should date by adding 6 days to the day the product was opened. Example would be to include: the cottage cheese container was originally opened on 9/23/2011 then add 6 days to date the cottage cheese container was originally opened with a consume by date of 9/29/2011. To correct these items provide or install an air gap above the drain the equipment drains into. Typically an air gap is twice the diameter of the drain line of the equipment above the drain the equipment drains into. ,

(Critical) I found tuna salad and deli style meats at a temperature of 48 degrees f. As discussed, these items are potentially hazardous food (phf). As such they must be maintained at a temperature of 41 degrees f. Or below. The chef turn down the temperature setting on the prep unit. I also asked him to keep the cover lid closed. Continue to closely monitor this unit, to ensure that it is operating at a temperature of 41 degrees f. Or below. A follow-up inspection will be made to ensure that this critical violation is corrected.

Observed outside and handle areas of upright coolers in prep area and also wif in dry storage area with an accumulation of debris and handprints. To correct, please clean now and on a more frequent schedule. , observed grease tray under grill in cooking area soiled with grease and debris. Staff indicated that they clean this tray weekly. All non-food contact surfaces of cooking equipment shall be cleaned every 24 hours or as needed throughout day. To correct, please clean this now and on a more frequent schedule.
