The only available mop sink is in the basement which is not conveniently located for filling up water in mop bucket and disposing of mop water. Provide sop's for how mop water is handled. This will be used to determine if you are compliance, if mop sink will be required to be installed or if a variance will be required to allow mop water to be disposed of in toilet facilities

The gasket on the door of the prep unit in the kitchen is torn. Once torn it is no longer cleanable. Replace split gaskets. The lid on plastic tub used for dry paper product storage is broken. Repaired with duct tape. Replace lid as duct tape is not a smooth cleanable surface.

The gasket on the prep unit door is torn. Once torn it is no longer cleanable. Replace spllit gasket.

The hood filters and hood canopy adjacent to the filters need cleaning. There is significant grease build up based on hoods being cleaned 3 wqeeks ago and exhaust fan of greater capacity being installed recently. It is possible that the fan is not properly functioning and or hood was not properly cleaned based on grease build up degree following these installation maintenance events. Clean now and determine reason for build up and repair/clean etc as required.

The following non food contact surfaces need cleaning: the interior of the freezer upright in the kitchen, the hood filters, the fryer cabinets. Clean now and place on a more frequent cleaning schedule. The bottom of the beer cooler at the bar has water build up most likely from a plugged drainline. Unplug drainline and clean bottom of cooler to eliminate water build up.
