(Critical) Be sure to label spray bottles with the common name of contents. I found one spray bottle not labelled and others that had faded labelling. Highly suggest using sticker labels on spray bottles. Corrected by properly labelling.

The exhaust hood does not adequately capture the steam coming out of your high temp dishmachine. Have hood serviced so steam is captured by the exhaust hood.

Boxed food product was observed on the floor in the walk in freezer. Keep product on racks at least 6" above the floor.

The alarm that monitors the detergent stays on during operation of the machine. Have serviced my manufacturer (ecolab).

(Critical) I found milk crates of clean chemicals stored on top of foods and food contact items and several chafer fuel containers stored on a rack above food contact items. Store toxic items seperated from foods and food contact items. Corrected by doing such.

(Critical) The following foods were past use by dates: ham(7/25), turkey(6/19), house made ranch dressing(7/19) and an opened gallon of milk. Staff need to be auditing foods on a daily basis and discard expired foods. Corrected by discarding these items.

Need to put up a soap dispenser in the employee restroom/chem closet and keep it stocked.

Keep paper towels stocked at the handsink in the employee restroom.
