(Critical) Three compartment sink: observed the pvc drain manifold to have slipped down. After loosening the threaded drain pipe connections on each of the three drain lines, push up this manifold all the way and re-tighten the compression fittings. An additional strap, etc. May be needed to maintain the drain line air gap above the flood rim of the floor sink. ,

(Critical) Observed this operation using time control for the coffee cream without a written policy or discard times for the pitchers provided at the customer counter. A four hour and a six hour time control policy form was provided to the manager. Complete the appropriate form and fax/e-mail me a copy. Train staff on this new procedure as needed. ,

After defrosting the freezer re-attach the flexible drain hose at the top, rear of the unit's interior to prevent the condensate leaking into the unit and freezing

Back counter: observed ice for drinks to be stored in a solid food tub on the counter. This is creating a situation where the melt water is not draining away. Provide a tub with perforations in the bottom that is placed inside of another tub to catch the melt water

Observed some decorating items for baked goods to be stored in a cardboard box in a back kitchen storage shelf. Provide a plastic tub that is easily cleanable to store these products

(Critical) Re-adjust the termination of the ice machine drain line so the discharge water is routed to the floor drain

(Critical) Observed left-over tomato soup, from the previous night, in a 4 qt. Plastic container to be at 46f in a back kitchen one door upright cooler (>6 hours). Corrected by discarding the soup. Ensure proper cooling of phfs

Observed a multi-use spatula being stored in a container of sanitizer at the front kitchen area. Do not store utensils in sanitizer between uses. Sanitizers must fully air dry prior to use

(Critical) Observed two unapproved pest products located in the facility: 1) a "hot shot" flying pest repellant (cannot be used in restaurants) hanging up on a back kitchen equipment storage shelf (corrected by discarding) and 2) a can of raid ant spray labeled for house-hold use only (corrected by removing from the facility). Ensure only chemicals approved for use in a restaurant are purchased and used according to the manufacturer's directions

(Critical) Observed a spray bottle of sanitizer in the dish washing area to be mixed way too strong (+500 ppm). Corrected by diluting to 200 ppm quat. Ensure the quat sanitizers are tested to be at 200 ppm prior to use with the available testing papers

Observed the floor sink located in the base cabinet that serves the espresso machine drain to be over-due for cleaning. Clean this basin at this time and more frequently in the future to prevent debris build-up and odors

Found the flexible vinyl drain hose for the ice making machine to have slumped downward. Provide a way to hold up the end of this hose so gravity doesn't pull it down

Observed the painted wall behind the cadco unox baking oven to still be scorched behind the exhaust outlet. In fact, the wall surface now has tiny small bubbles. Provide a non-combustible wall surface behind this unit and find a way to maintain the manufacturer's rear wall spacing for this unit by referencing the owner's manual

Observed the painted wall behind the cadco unox baking oven to be scorched behind the exhaust outlet. Provide a non-combustible wall surface behind this unit and find a way to maintain the manufacturer's rear wall spacing for this unit

Observed the wet mop head to be resting in the bottom of the mop sink. The provided hanger does not hold up a wet mop head due to it being too heavy. Provide another way to hang up the mop to facilitate faster drying as well as keeping the wall and handle from being soiled

Observed some misc. Items in the back hallway (by the back door) stored on the floor. Please sort through these items and discard appropriate items and the remaining items should be stored on a shelving unit at least 6" off of the floor to facilitate cleaning

Observed a small container with black plastic spoons in it to be stored jumbled. Please have an employee with clean hands organize the spoons so the handles are all extended in the same direction

Observed a few interior surfaces of the ice making machine to be in need of cleaning on a more frequent basis

Observed the counter under the baking oven to be in need of cleaning now and more frequently in the future

(Critical) Spray bottle of sanitaizer found on dry goods storage shelf with cans of food. Pic - person in charge corrected by removing spray bottle and relocating to appropriate approved location

(Critical) Found quiche and yogurt parfaits holding @ 47 degrees f in the front display cooler. Corrected by discarding items mentioned above. Pic adjusted the thermostat to lower the internal temperature of the cooler. In the future, monitor the temperature of potentially hazardous foods to ensure proper cold holding. Cold holding temperature @ 41 degrees f or less.

Found drain line from the ice machine not secure/loose. To correct - fasten or secure drain line so that the air gap above the floor drain is maintained

Ice machine lid found to be broken. Correct by repair/replace of lid to avoid entry of debris and maintain good seal on the ice machine

Found personal beverage containers on dry storage shelf among food cans. Correct by designating a storage area away from food for employee's personal items.

Found unidentified food items (white powder) in large bins under baking/prep area. Correct by identifyingcontects with common name: for example - sugar, flour, etc
