(Critical) Found time/temperature control for safety (tcs) food, carafes of milk, cream, and nonfat milk in the self service counter which are on a time control policy without time control marks. Pic corrected by having employee empty carafes, wash carafes, refill carafes, and provide a 4 hour discard time control mark. Pic has been instructed to monitor and ensure employees are following time control policy, that is providing time control marks and discarding items when four hours have passed.

Two of the three did not have a use-by time sticker and the other one had a sticker from the prior day with a 4 pm discard time. These carafes were dumped out and sent to the dish washing sink. Observed four decorative metal objects hanging from the ceiling above the beverage station that has excessive dust accumulation on them. After closing/before opening or on a holiday when foods and equipment is put away/protected these metal pieces need to be dusted/cleaned
Observed an employee drink in the basin of the back area hand washing sink, and a covered, partially eaten pastry on the rim of the same sink. Corrected by discarding these items
Observed a case of paper to-go pastry bags stored next to the hand washing sink and under the ice pail in the back room. These bags have water damage. Discard these bags and provide an alternative storage location for these items in the future
