(Critical) Found the sanitizer dispenser in the main level mop closet dispensing sanitizer concentration above manufacturer's specification of 150 to 400 ppm. To correct discontinue using this dispenser for sanitizer and have dispenser repaired to dispense at manufacturer specification.

Found ready to eat foods ( celery, mustard, pickles and cheese) stored next to raw foods (raw bacon and ribs) in the 2 door reach in cooler in the upper level kitchen. Pic corrected by rearranging foods, that is placing ready to eat foods on shelves above raw foods in coolers. Pic has been instructed to monitor and ensure employees are storing foods properly.

Note: employee states hot dogs were heated to 140°F, and placed in front of the hot dog machine. ,

To correct remove y type shutoff valve or add a hose bibb vacuum breaker to y type shutoff valve(s), and remove spray nozzle at the end of each day. ,

(Critical) Found the interior front shield of the ice machine in the storage room soiled. Found the pop nozzles of both pop guns in the bar soiled with accumulation. (Critical) Observed the quat 144 sanitizer by eco-lab to be dispensed at 400 ppm. Either adjust the dispenser to provide the label required 200 ppm or switch to their quat 146 sanitizer that is useable from 150 to 400 ppm

Observed three ice transfer pails to be stored upright in the first floor storage room. Please keep these pails inverted to allow water to drain out and to prevent debris accumulation inside the containers

Observed a basket of apples in the one door upright cooler with the labels still on them. Ensure apples (and other fruit where the skin is eaten) are washed in a dedicated culinary sink (has an air gapped drain) prior to service

Observed small containers of yogurt with a date of october 25th to still be in the two door cooler. Corrected by discarding these yogurt

The coffee machine dispensing spouts are in need of daily cleaning

Observed a few metal kitchen pans to be stacked in storage without being fully dry. Please keep these pans separated until they are dry to prevent mold or bacterial growth

Observed the metal housing for the food trap screen on waste water drain for the dish washing machine to be overdue for cleaning to remove built-up food debris.
