Found the automatic paper towel dispenser slowly dispensing paper towels. To correct repair paper towel to dispense paper towels properly.
(Critical) Found time/temperature control for safety (tcs) food, diced chicken 50°F, tofu 50°F in the cold hold well in the front counter. Pic corrected by discarding tcs food and has been instructed not to use this cooler to hold tcs food until repaired/replaced to hold tcs food at 41°F or lower. ,
Found the cold hold well in the front counter area not holding tcs food at 41°F. To correct repair/replace cooler to hold tcs food at 41°F or lower. Found pop dripping from the self service pop machine toward the back of the front counter top and draining into a pan. To correct repair pop machine. Found the 4 door sectional reach in cooler with an out of order sign posted. Pic states cooler is not functioning properly and a work order has been placed. To correct repair cooler to hold tcs food at 41°F.
Observed grease on the underside edge of the cooking exhaust hood. To correct thoroughly clean hood and keep clean.
Found grease on the sides of the hood on the gutter grease collection area. To correct clean areas and keep grease to a minimum.
Observed the kitchen to be hot with excess cooking exhaust and cooking equipment not under the cooking hood. To correct move/adjust cooking equipment to be under the cooking hood as much as possible.
Found the emergency door release of walk in cooler #1 missing from the interior of the door. To correct repair/replace emergency door release. Found the door gasket of the hot holding unit with large cracks. To correct repair/replace door gasket. Found the automatic paper towel dispenser in the grill area slowly dispensing paper towels. Pic corrected by replacing batteries, and has been reminded to keep paper towel dispenser in good working order.
Jump express: observed slight accumulation on the interior front shield of the ice machine. To correct follow manufacturers directions and clean ice machine and clean on a more frequent schedule.
Jump express: observed employees with fingernail polish working in food prep area and dishwashing area not wearing gloves. Pic corrected by instructing employees to wear gloves.
Jump express and e-street grill: found no paper towels in both paper towel dispensers. Pic corrected by filling paper towel dispenser and has been instructed to remind employees to fill paper towel dispenser when empty.
E-street grill: observed employees wearing bracelets working on the cooking/prep line. Pic corrected by having employee remove bracelets.
Jump express: found the handsink in the kitchen dishwashing area removed from facility. Pic states handsink was leaking, a work order has been placed they are waiting on new handsink. To correct provide and install handsink as soon as possible. Note: a handsink along the wall was accessible to employees.
Jump express: found the interior front shield of the ice machine soiled with slight accumulation. To correct follow manufacturer's instructions and clean ice machine and clean on a more frequent schedule to preclude accumulation.
E-street grill: found the edges/lip of the cooking hood above the fryer soiled with dripping grease. To correct clean hood and clean on a more frequent schedule to preclude accumulation
Jump express: observed the presence of flies on the wall of the storage room. To correct keep facility clean and dry, in good repair, and continue fly control measures.
E-street grill: found no hot water flowing from the handsink in the front counter prep area. Pic corrected by turning hot water supply line valve, and states hot water was probably turned off for maintenance. Pic has been reminded that hot water is required for proper handwashing. Violation corrected.
Jump street: found the floor under cooking equipment soiled with greasy accumulation. To correct thoroughly clean floor and clean on a schedule to preclude accumulation.
(Critical) Used a quat test kit and found the sanitizing solution in the 3 compartment sink below manufacturers specification of 200 ppm. To correct call for repair and adjustment, and use your quat test kit to mix sanitizing solutions to 200 ppm. Note: sign on the sanitizer compartment of the 3 compartment sink should be changed to indicate sanitizer type and quat sanitizing solution temperature should be at least 75°F. ,
Found the floor of the basement storage area (under shelves) soiled with accumulation of debris. Found the floor of the "taco bell" basement walk in cooler soiled with accumulation of debris. To correct clean as soon as possible, and clean on a more frequent schedule.
Found the thermometer of the 4 door sectional freezer showing a temperature of 39°F and frozen items felt soft. To correct call for repair, and move items to another freezer, until freezer is repaired and working properly.
Entire facility: found the floor (under shelves, edges and corners) in the storage room soiled with accumulaiton of debris. To correct thoroughly clean floors and clean on a more frequent schedule.
E street: found the edges of the cooking hood soiled with grease and found the door tracks of the sliding door chest freezer soiled with acccumulation. To correct clean as soon as possible, and clean on a schedule to preclude accumulation.
Jump express: found a gap between the hood filters in the cooking hood. To correct replace missing spacer. Entire facility: found the shared walk in cooler #1 with loose emergency door release. To correct repair/replace emergency door release.
Found a dead mouse under the cereal storage shelf in the lower level storage cage area. To correct remove dead mouse and thoroughly clean floors.
(Critical) Observed the quat sanitizer to be too weak at the three compartment sink and the wiping cloth buckets. Temporarily corrected by providing replacement sanitizer at 200 ppm. Have the quat dispensing pump adjusted to provide 200 ppm quat sanitizer
(Critical) Observed the following items to be out of temperature: vegetarian egg rolls on the serving line at 115 to 125f. Corrected by reheating to above 165f. Fried rice at 105°F in the hot holding cabinet. Corrected by reheating in the steamer to above 165f
(Critical) 1) beef, chicken and shrimp at the jump express make line to be at 44 to 45f. These foods were in plastic bags stored in the metal insert pans. Corrected by placing these foods in direct contact with the metal food pans and providing pan covers. 2) the traulsen four door cooler behind e-street grill was maintaining foods at 44 to 45f. Relocate the phfs to an other unit maintaining 41f or below.
(Critical) Observed raw ground turkey patties stored on the shelf above raw beef patties in the one door upright e-street grill cooler. Corrected by relocating the turkey to the bottom shelf
Observed two ice transfer pails to be stored upright. Corrected by inverting these pails on a clean sheet tray
Observed the traulsen four door cooler to be operating at 44/45f. Have this unit adjusted/repaired as needed to maintain 41f or below
Observed the floor sink in the back kitchen cook line trough drain to be leaking into the basement. Repair as needed
