In the kitchen, under the fryers, observed the floor with an accumulation of grime and food debris. The accumulation appears to be from several days without cleaning. Correct by cleaning now and on a more frequent basis to prevent the accumulation of debris.

At the pepsi merchandiser cabinet next to the soda machine observed the door seals split and the door handle broken. Duct tape has been used in an attempt to repair the seal. Correct by replacing the door seals and door handle. Pic indicates the unit is owned by pepsi and he has already called them requesting service. This violation was observed during the last several inspections. Pepsi has replaced the soda machine since the last inspection. Pic indicates pepsi will be sending a repair person for the merchandiser.

At the main cook line observed the ventilation filters with a heavy accumulation of grease and dust. Correct by cleaning now and on a more frequent basis to prevent the heavy accumulation of grease and dust

(Critical) On a sheet tray, next to the deep fryer, holding different containers of dry breading observed a 1/9 hotel pan half full of raw egg wash at 61 degrees f. Raw eggs must be held at a temperature of 41 degrees f or below. Pic item corrected during inspection by discarding the raw eggs and restocking with fresh proper temperature eggs. The pic also educated his kitchen staff about proper storage methods for the raw eggs. Item corrected

Correct by adding 6 days to the day the product was opened or prepared. For instance salad dated 10/13/2011 would need to be dated with a discard date of 10/19/2011

A metal stem food thermometer is not available. Provide 2-3 accurate food thermometers for monitoring food temperatures. Knowing that foods are at a safe temperature is critical.

The bottom of this stand-up freezer needs to be wiped out and cleaned.

I found that a container of squid meat is thawing at room temperature. As discussed, this practice is unsafe and must be immediately stopped. Thawing must be done under refrigerator or another approved method.

The bottom of the microwave oven needs to be cleaned. Frequent cleaning of equipment is an absolute must in the restaurant. Increase your cleaning frequency of the oven.

(Critical) I observed an uncovered beverage in the prep area. This is not allowed. Drinks must be covered by a lid. A sippy style drink container is also allowed. Educate and monitor the staff and ensure that this rule is followed. Corrected at the time of inspection. The manager spoke to the staff as directed above.
