Observed excess frost and ice build up in the areas surrounding the walk in freezer fan. To correct defrost walk in freezer and keep frost build up to a minimum.

Employee corrected by replacing quat sanitizing solution with a properly made concentration. (Critical) Observed a metal pot of thick chicken gravy from the previous day that was partially covered with plastic wrap to still be at 45/46f at +/- 11 am. Corrected by discarding. In the future, spread this food out into a shallow hotel pan to increase the surface area and place it on the top shelf in the refrigerator expedite the cooling

The under side of the hobart mixer head is over-due for cleaning. Please clean this area now and maintain clean

The connection of the sink drain to the garbage disposal at the right hand basin of the two compartment food prep sink to be leaking. Repair this connection as needed to eliminate the leak
