(Critical) Found time/temperature control for safety (tcs) food, cheese in a bag 108°F in the hot holding cheese dispenser. Found tcs food, hot dogs 120°F in the hot dog hot holding unit. Pic corrected by having employees discard cheese and re-heated the hot dogs to 165°For 15 seconds, and has been instructed to monitor hot holding temperatures. ,
Found light shield missing on ceiling light above hot holding units. To correct repair/replace missing light shield.
Found the hot holding cheese dispenser not holding cheese at 135. To correct repair/replace hot holding cheese dispenser to hold cheese at 135 or above. Found pop syrup leakng from the pop machine area. To correct repair leak.
Found no waste basket around handsink area. To correct provide waste basket for handsink area for disposable towels.
(Critical) 1) the freezer for ice on the visitor's side of the stadium is still located under a large concrete beam upon which birds roost. Bird feces are falling onto the top of this freezer and the freezer doors. Prior to the next home football game take necessary action to protect this food source, such as: a) relocate the freezer to a location without a bird roosting area above it, b) construct a protective roof over the freezer that is large enough to protect the freezer, or c) install anti-roosting spikes on this beam above the freezer. Once protective measures have occurred, the freezer needs to be thoroughly cleaned. 2) observed an employee toss a bag of commercial ice over the booth counter (from the customer side) onto the concrete floor. This ice was to be poured into the ice bins and dispensed with fountain drinks. Corrected by discarding the ice. Bagged ice may not touch contaminated surfaces. If the bags of ice have melted and refrozen into a large mass, ensure staff only use a sanitized counter to slam down a bag of ice to separate the ice cubes. When bags of ice are handled roughly, or slammed down on a hard surface holes can be created in the bag and the ice can be contaminated. ,
