(Critical) Found food, salad, apple slices, butter on the self service display table with sneeze guards which covered only the tops of food but not the sides. Corrected by educating pic that sneeze guards need to be set up properly, that is angled to protect food. Found a bowl of sugar on the self service beverage table without protection. Pic corrected by replacing sugar with packets of sugar. Pic has been reminded that food on display shall be protected from contamination by sneeze guards or other effective means, and sneeze guards should be set up properly.

(Critical) Found no thermometer available in the kitchen at the time of this inspection. To correct - obtain required thermometer to be always available for use in the kitchen as required.

(Critical) Found sani bucket with a quat sanitizer at a level that was too low. Corrected - bucket was emptied, new sanitizer was mixed at the correct level

(Critical) Found no paper towels at the hand sink in the beverage service room on the 3rd floor. Corrected - paper towel was provided as required

(Critical) Found chemical spray bottles stored on the same shelf with crackers on a shelf in the cubby on the 3rd floor. Corrected - spray bottles were relocated away from food items

(Critical) Found a plastic tub with bar supplies; shakers, jiggers, poring spouts that were dirty. Found coffee carafes that were stored as clean with residual liquid in them. Corrected - bar supplies and coffee carafes were sent to the dishwasher for thorough cleaning. In the future, care must be taken to ensure utensils are clean before storing them

Found a rack of dirty juice and water carafes stored directly on top of racks of clean coffee cups. Corrected - all racks removed and taken to dishwasher for thorough cleaning. Care must be taken to not allow dirty kitchenware to contaminate clean kitchenware

Found a burnt out bulb at the door inside the wic. To correct - replace bulb

Found tongs stored jumbled in a drawer. To correct - care should be taken to store multi-use cleaned and sanitized utensils with the handles extended to prevent staff from grabbing the food contact surface of the utensil

Found coffee pump units to be stored and transported in original cardboard boxes. The boxes are in bad condition and not designed to be storage/transport containers. They are not durable or cleanable as required. Corrected - cardboard boxes were thrown away

Found many surfaces of plastic drawer units and shelves that were in need of cleaning, spills and splashes that were not cleaned up. To correct - care must be taken to wipe up spills as they occur and gererally, keep on a more frequent cleaning schedule

Found an empty g2 beverage bottle in the (empty) ice bin in the 3rd floor beverage service room. Corrected - g2 botlle was removed. Care must be taken to ensure such items are not allowed to remain in contact with food contact surfaces

Found large beverage cambros, ice transport cambros, coffee carafes stored wet. To correct - clean untensils and equipment must be completely air dried before storing.

(Critical) Used a quat test kit and found the quat sanitizer in the 3 compartment sink below manufacturer specification of 200 ppm. Pic has been instructed to repair dispenser and to use test kit to make up sanitizing solutions.

Observed employees not wearing hats, working in the dishwashing area. To correct provide hats and remind employees to wear them.

Found the interior front shield of the ice machine soiled with slight accumulation. To correct follow manufacturers directions and clean ice machine.

Observed employee dampen a towel in a pitcher of water and then wipe/polish silverware. To correct discontinue this practice of wiping silverware with a damp towel. Pic has been reminded that air dried silverware may be polished with a clean dry towel.

Found the wall in the clean utensil storage room damaged with peeling paint and uneven surfaces. To correct repair wall to be durable, smooth and cleanable.

Observed the ceiling air vent cover in the waitstation out of place. To correct reinstall air vent to its proper place in ceiling.

Found the cabinet storage shelves in the beverage waitstations soiled with accumulation. Found the utensil and equipment storage bins under the coffee urn soiled with splash and build up. To correct clean as soon as possible, and clean on a more frequent schedule.

Found no handwashing sign in the dishwashing area handsink. To correct provide sign reminding employees to wash hands.

Found the drain line of the dumpsink in the beverage waitstation, and the 3 compartment sink in the dishwashing area leaking. To correct repair drain lines.

Observed the presence of flies in various areas (beverage waitstations, dishwashing area, etc. . . )of entire facility. To correct keep areas clean and dry, in good repair, and continue pest control measures.

Found the spray nozzles of the dishwashing machine clogged with debris. To correct clean spray nozzles and clean when clogged

Observed food (caesar salad, dressing, and cookies) on display for self service without protection. To correct protect food on display with means such as sneeze guards.

Found the quat dispenser in the 3 compartment sink not dispensing quat sanitizer. To correct repair quat dispenser.

Found slight accumulation on the interior front shield of the ice machine. To correct follow manufacturers directions and clean ice machine and clean on a schedule to preclude accumulation.

(Critical) Found time/temperature control for safety (tcs) food, pork loin 113°F, and turkey 123°F in the top shelves of the 2 door hot holding, in the banquet service area. Pic corrected by verifying with cook time food was cooked and placed in hot holding, based on this time turkey was cut into smaller portions and placed in a shallow pan for rapid cooling, pork loin (sliced) was placed in walk in cooler for rapid cooling. Pic has been instructed to monitor and verify that hot food is maintained at 135°F.

Found tcs food, turkey breast cooling covered in the walk in cooler. Pic corrected by having employee cut turkey breast into smaller portions and loosely covered pan.

Found the floor (under equipment, edges and corners) in the entire kitchen and waitstation soiled with accumulation. To correct thoroughly clean floors and clean on a more frequent schedule.

Found the pop nozzles of the pop machines in both wait station soiled with slight accumulation. To correct follow manufacturers directions and clean pop nozzles.

Found melting ice cream in the 1 door reach in freezer. Pic temporarily corrected by discarding ice cream, and has been instructed to monitor temperatures in freezer, and to call for repair if food is not maintained frozen.

Observed staff working in the dishwashing area, and prep areas not wearing hat/hair restraint. To correct provide hat/hair restraints and remind employees to wear them.

Found the spray nozzles of the dishwashing machine clogged with debris. To correct clean spray nozzles, and clean as needed.

Found co2 cylinders stored on the front edge of the handsink. To correct relocate cylinders and keep handsink accessible at all times.

Found covered boxes of utensils stored on the floor of the storage room. To correct store utensils on shelf at least 6 inches off the floor.

The following items need cleaning & sanitizing now and on a regular basis: 1) the soda spouts (please be aware the removable spout has an inner diffuser piece that needs to be separated from the spout to provide adequate access for thorough cleaning); 2) the southern ice machine (both the ice production area and the ice deflector shield at the top of the ice holding bin).

Multiple floor sinks are in need of cleaning at this time: 1) the one serving the two compartment food prep sink, 2) the two floor sinks in the middle of the staging area room, 3) the one serving the three compartment sink, and 4) the receiving drain for the two beverage station wastewater lines at room 362

1) the temperature gauge for the dish washing machine was not operable today. Repair/replace as needed to allow staff to verify the proper final rinse water temperature is being provided. 2) the spill tray drain line appears to be plugged on the pepsi beverage dispensing machine in room 362. Have the blockage eliminated so the liquids drain away as intended

Observed multiple plates in the rolling storage carts to have the top plates upright & the ice transfer pails to also be upright. Please turn over the top plates of each stack when in storage, and either invert the ice pails on a clean and sanitized surface or hang them up-side-down with a wall hook/bracket (this will facilitate moisture drainage)

Observed food and slime build-up at the entry to the dish washing machine and on the interior surfaces of the exhaust vent (also at the entry to the dish washing machine. An employee was actively cleaning this area once it was identified to them. Please ensure this area is maintained clean on a daily basis
