Pic corrected by having employee reheat chicken to 165°For 15 seconds and has been instructed to monitor and ensure commercially processed rte food is reheated to at least 135°For hot holding. Note: this is a repeated priority violation and a rcp plan has been issued. ,

Found clean utensils and single use utensils stored under the drain line of the handsink. To correct relocate items away from drain line.

Found the floor in the front counter area under equipment, edges and corners, and walk way soiled with debris. To correct clean floors and keep floor clean.

(Critical) Found ready to eat, commercially processed food, fried chicken 110 to 120°F in the front counter steam table and in the hot holding unit in the back kitchen area. Pic states chicken may not have been heated to at least 135°F for hot holding, as other items in steam table and hot holding unit were at least 135 and above. Pic corrected by having employee reheat chicken to 165°F for 15 seconds, and has been instructed to monitor and ensure ready to eat, commercially processed food is heated to at least 135°F for hot holding.

Found rice scoop used to fill rice container for hot holding stored on top of the rice cooker. Pic corrected by providing a clean container to store rice scoop and was reminded to clean and sanitize rice scoop and container at least every 4 hours.

Found hood filters placed in cooking exhaust hood with panels in a horizontal position. To correct verify with manufacturer the correct postion of hood filters as panels are usually placed in a vertical position to allow oil and grease to drip down and thru filters.

(Critical) Found time/temperature control for safety (tcs) food, several containers of beef 50°F in the 1 door glass reach in cooler. Pic temporarily by fulling cooking beef to at least 165°F and cooled beef. Pic has been instructed not to use this cooler to hold tcs food, until repaired/replaced to hold cold tcs food at 41°F. Note: pic states beef was pulled from properly working walk in cooler and placed in 1 door glass reach in cooler for less than 3 hours. Found hot tcs food, green beans 120°F and egg rolls 115°F in the front counter hot hold display (steam table). Pic corrected by discarding beans and eggs rolls and has been instructed to review procedures of pre-warming steam table and ensuring food is cooked to proper minimal temperatures before placing in steam table. , ,

(Critical) Found time/temperature control for safety (tcs) food, an opened carton of liquid eggs 56°F in a shallow ice bath. Pic temporarily corrected by discarding eggs, and has been instructed to either use an ice bath that completely surrounds carton of liquid eggs or keep in cooler at 41°F. ,

(Critical) Observed employee place time/temperature control for safety (tcs) beef and vegetables 100°F into hot holding pan from wok. Employee corrected by continuing to cook beef to 145°F. Pic has been instructed to monitor and ensure tcs food is cooked to it's minimum internal temperature. ,

(Critical) Found a covered container of brown rice 49°F cooled previous day on the shelf in the walk in cooler. Pic corrected by discarding brown rice and has been instructed to monitor that employees are properly cooling tcs foods, that is from 135°F to 70°F in 2 hours and then from 70°F to 41°F in 4 hours. ,

Found no thermometer to measure internal cooking temperatures of tcs foods. Pic corrected by providing thermometer to measure cooking temperatures.
