(Critical) Time not marked on vegetable pakora in dining area. Facility using time as a public health control for this food item. Written policy is available. Critical corrected: at time of inspection per pic vegetable pakora cooked off at 1:00 pm. Time out and time to discard recorded on side of food container

Please provide thermometer for small table-top reach-in-cooler in dining area and place for easy viewing

Please provide accurate food thermometer to monitor food temperatures. Pic could not find thermometer

Observed small quantities of food in metal third pans in small reach-in-cooler cooling with lids on. Please partially cover or uncover pans to facilitate the cooling process. In addition please stir the food occasionally through the cooling process. Some food items for cold bar recently cooked in kitchen in process of cooling on the cold bar (small quantites within metal third pans). Pic will stir to facilitate cooling these food items. Please monitor with thermometer to assure cooling is accomplished within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F. Pic will look into obtaining an additional shelf for one door ric to make it easier to spread the pans out when cooling.

Some single-use containers used for scoops in bulk food storage containers. Please provide food-grade scoops or measuring cups that can withstand repeated warewashing and are finished to be smooth and easily cleanable

These areas in need of cleaning: oven catch trays, hood filters and sides of hood area above oven (interior and exterior). Please clean now and as often as necessary to maintain in clean condition

Observed improper cooling methods in place for cooling potentially hazardous food items. Cooked potentially hazardous food shall be cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F. Corrected at time of inspection by removing covers from some food items cooling and placing some in cooler or freezer to finish cooling properly. Provided cooling monitoring charts to facilty. Observed greens & tofu in 6 inch third pan and lentils in 6 inch sixth pan both at 125°F; placed in ric uncovered at 11:45 am. Stir frequently while cooling. Will check at 1:45 pm or sooner to assure food items cooled to 70°F within 2 hours. May need to use these food items during served period. Both food items were used at 1:00 pm needed for buffet; found at 95°F before reheating. Facility also cooling banana pudding
