(Critical) Some food items found stored improperly in walk-in-cooler. Food shall be protected from cross-contamination by separating raw animal foods during storage, preparation, holding and display from ready-to-eat food. Except when combined as ingredients, separating types of raw animal foods from each other such as beef, fish, lamb, pork and poultry during storage, preparation, holding and display by arranging each type of food in equipment so that cross contamination of one type with another is prevented and preparing each type of food at different times or in separate areas. Crtical corrected: at time of inspection relocated duck to bottom shelf and relocated canned crab to top shelf. Please remove several wooden pallets and other metal rods stacked next to dumpster to prevent potential harborage conditions for insects and rodents

Please provide sign at bar handwash sink notifying employees to wash their hands

These areas in need of cleaning: floor/equipment juncture in some areas on cook line and ceiling air ducts in some areas of kitchen. Please clean now and place on routine cleaning schedule

Some water build-up interior bottom of bar reach-in-cooler. Please check to see if drain is plugged and/or address any condensation issues to provide smooth, easily cleanable surface and to prevent containers from sitting in water

Inaccurate thermometer bottom section prep unit. Please provide accurate thermometer and place for easy viewing

Excess frost build up on top of both prep units and some frost bottom of prep unit near food prep sink. Please defrost as needed to provide smooth, easily cleanable surface. Continue to monitor units to ensure they are maintaining proper temperature
