Walk-in-cooler door gasket near rear prep kitchen in poor repair. Please replace to provide good seal and so smooth and easily cleanable

(1) single-service cups (used for mouthwash) stored improperly in cabinet under handwash sink in women's restroom. Please discontinue storing under drain line where they may be exposed to splash. You may store in a waterproof covered container to prevent potential contamination. (2) take-out containers at waitress stations stored improperly. Please open from bottom end to prevent potential contamination of food-contact end

Interior of ice bin at bar and interior ice bin at waitress station closest to wine cellar in need of more frequent cleaning. Please clean at a frequency necessary to preclude accumulation of soil or mold

Observed two wooden cutting boards in prep kitchen with large cracks. Please resurface if they can no longer be effectively cleaned and sanitized, or discard if they are not capable of being resurfaced

Observed a few fruit flies at bar. Please continue to work with your extermination company to eliminate any pests. In addition keep all areas clean and dry

(Critical) Written procedures not provided for time as a public health control policy for roasted garlic and eggplant. If time without temperature control is used as the public health control for a working supply of potentially hazardous food written procedures shall be prepared in advance. Corrected at time of inspection by writing the procedure for time as a public health control for the roasted garlic and eggplant used at salad staton. Small quantities of each food item used throughout the dinner serve period from 5 pm - 9 pm; roasted garlic prepared immediately prior to opening and roasted eggplant removed from refrigeration immediately prior to opening, at approximatley 4:30 pm - 4:45 pm.

(Critical) Observed garlic sausage cooling improperly in walk-in-cooler in covered baine marie. Cooked potentially hazardous food shall cool within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F using one or more of the following methods listed. Corrected at time of inspection by spreading garlic sausage into shallow pan uncovered, stirring and placing back into wic. Garlic sausage found at 47°F; remaining food items in cooler found at 38°F. Per pic was cooked within the last 2-3 hours

Observed section of stove located outside hood canopy on far right side when facing cook line. Please move cooking equipment closer together where possible to assure all equipment requiring ventilation is located under the hood canopy. You may consult with the ann arbor building department if a side curtain would be acceptable if needed

Grout missing between floor tiles in prep kitchen. Please regrout to provide a smooth, easily cleanable surface and to prevent standing water in this kitchen

Observed some clutter and unnecessary items in both storage rooms in prep kitchen area and electrical room. Please continue to sort through and get rid of any items not used in the operation and maintenance of facility.

Corrected at time of inspection by correcting the dates on the opened dairy items in the delfield ric and discarding the opened half & half at the bar ric

These areas in need of cleaning: floors under shelving unit across from ice machine, shelving units that store clean plates in main kitchen, top ledge of middle oven doors (southbend oven), floor/wall juncture under counters main kitchen ( with silver king lettuce refrigerated unit on counter), ceilings and ceiling vents in main kitchen & main kitchen dishwash area and cabinet under waitress station closest to wine room (please remove soggy box under the water dispensing drain line at same waitress station and do not store any items under a drain line)

This waitress station has walls that are crumbling causing some debris on the shelving units. As discussed in the past any items stored here should be covered

(Critical) Reach-in-cooler at broiler station on cook line main kitchen not maintaining potentially hazardous food at proper temperature. Potentially hazardous food shall maintain at 41°F or below or 135°F or above. Temporarily corrected at time of inspection by discarding potentially hazardous food items maintaining at 47°F - 49°F in reach-in-cooler. All other units on cook line maintaining food at proper temperature (41°F or below); some food items will be stocked in other units through dinner and some food items will be iced until unit can be repaired. ,

(2) wet wiping cloth stored improperly in prep kitchen. Once cloths are wet please store in the wet wiping cloth solution at proper sanitizer concentration

A few flies observed in sump room near soiled linens. Please continue to work with your extermination company to eliminate the flies and discuss other options of storing the soiled linens to prevent a harborage/attraction area for the flies

Observed standing water on the bottom of the reach-in-cooler at the grill station. Please unplug drain or repair unit as needed to eliminate standing water. Until then provide a rack to store the food containers out of the standing water.

(Critical) Cockroaches present in rear kitchen near dishwash area. Not corrected. Facility is working with extermination company that treats facility routinely; reviewed invoice; there are no recommendations from extemination company (pestco professional pest management, livonia, michigan 734-591-6522) to get rid of cockroaches. Provide copy of recommendations from extermination company and follow these recommendations. The extermination company should be working towards getting rid of the cockroaches, as long as all recommendations are followed by the restaurant. ,

(Critical) No sanitizer present at automatic warewashing machine prep kitchen. Critical corrected: at time of inspection dishwasher unblocked area near front of dishmachine which was causing excess suds build-up; proper sanitizer concentration now present at dishmachine. Please monitor chlorine concentration daily with chlorine test kit

(Critical) Some refrigerated, ready-to-eat, potentially hazardous food items found without datemarking or with incorrect discard dates. Critical corrected: at time of inspection chicken broth properly labeled with discard date (date prepared known by prep chef); discarded opened whipped creams with a 5/30/11 discard date.
