Observed the scoop in the bulk container of corn meal to be laying jumbled in the product with its handle in contact with the food. Corrected by repositioning scoop so that its handle is positioned in the product so the handle is pointing up and not in the food. Corrected
Observed several in-use wiping cloths in the facility on counters and not in a bucket with sanitizing solution. Person in charge indicated that corporate policies are moving them to do away with the sanitizing bucket and use spray bottles with sanitizer. That is accecptable if you use disposable (single use) paper towels for wipe ups. Otherwise, the use of reusable towels must be used in conjunction with buckets with the proper concentration of sanitizing solution. Keep towels fully submerged in the solution as well. Corrected by preparing a sanitizing solution in a bucket and placing a fresh set of towels into this bucket for countertop wipe downs. Corrected.
Observed the working bulk container of corn meal to not be labeled. Working bulk containers of food shall be labeled with the common food name of its contents. Corrected by labeling the container. Corrected
The right-hand side dumpster cover is damaged (most of it is missing). Contact your solid waste hauler to have them provide a replacement cover or switch out the dumpster with another one with both lids intact
The shared dumpster is over-flowing with trash bags. Make arrangements for either increased pick-up frequency or have them provide a larger dumpster to handle the trash volume
Observed a significant amount of the rigid, clear plastic food containers (made by carlisle) to have cracks in the bottom of them. Provide replacement containers
Observed two wet mop heads improperly stored: one was resting in the bottom of the mop sink and another stored in a mop wringer. It appears the mop holder device will no longer hold up the heavy, wet mops. Provide a different style of mop holder so staff can hang the wet mop heads above the mop sink to facilitate faster drying
Dish washing area: the floor sink and the floor drain are in need of cleaning now and more frequently in the future (2 to 3 times per week) to eliminate debris build-up. Remove the metal drain grate so the piping under the grate can be cleaned.
Observed a domino's coat stored on the corner post of a storage rack at the back of the store. Corrected by relocating the coat to a coat hook
Observed some personal food for an employee stored in the walk in cooler on the top shelf of a rack. Provide a storage container on a bottom shelf for employee foods to eliminate the possibility of contaminating your customer's food
Back room storage shelf: observed two stacks of salad containers stored out of their packaging with the food contact surfaces exposed. Corrected by discarding the top unit from each stack and inverting the remaining units on the storage shelf. Alternatively, these containers may be stored in a plastic bag for protection
Observed the right side dumpster cover to be damaged (3/4 of the cover is missing). Contact the solid waste hauler and have them repair/replace this unit as needed
(Critical) Observed the artisan dough stretching decal to be lifting up at the edges and with a couple of bubbles that have the top layer missing. This situation creates areas where moisture and debris can accumulate and allow bacteria to grow. Provide a replacement sticker.
(Critical) Again, access to the back kitchen area hand washing sink was blocked by boxes of dry goods for the duration of the inspection. These items were delivered this morning. Ensure staff do not store items in / in front of the hand washing sink to allow for convenient access for hand washing
(Critical) Observed a metal stem thermometer at the back kitchen to be reading way to cold (20f+). Corrected by re-calibrating to be accurate
(Critical) Observed two spray bottles with what appeared to be glass cleaner lacking chemical labels. Corrected by applying a label to each bottle. Properly labeled spray bottles prevent chemical mix-ups
Both wet mop heads were observed on the mop sink floor. Please instruct staff to hang up wet mop heads over the mop sink after use/rinsing to facilitate faster drying
The floor sink serving the dish washing station is over-due for cleaning. Ensure staff are cleaning this basin nightly
(Critical) The back room dish washing station hand sink is blocked by towels, chemical spray bottles, a dust pan and several brooms. Correct by keeping this area free and clear for convenient access to the sink
(Critical) Observed the mop sink faucet with an atmospheric vacuum breaker installed to have downstream shut-off valves. No downstream shut-off valves area allowed downstream from atm. Vacuum breakers. Install a wasting tee/flow through vacuum breaker between the mop sink spout and the installed "y" splitter
Observed an exhaust hood filter section to be out of place on the outlet end of the pizza oven. Properly install this filter
