Corrected by educating employee that dishes are to be washed in soapy water, rinsed in clean water, dipped in a sanitizing solution, and air dried. Employee stated she was not aware of sanitizing step and she was trained as she described. This is a repeated critical violation and a risk control plan form and an administrative conference notice has been issued. ,

Corrected by educating employee that thermometer must be sanitized with sanitizer prior to taking food temperatures. Note: no sanitizer available at time of inspection. Employee corrected by making up a spray bottle of sanitizer. ,

Asked employee to describe how utensils are washed, employee stated that utensils/dishes are washed in soapy water, rinsed and dried with paper towels. Educated employee, that dishes are to be washed in soapy water, rinsed in clean water, dipped in a sanitizing solution, and air dried. Employee stated she was not aware of sanitizing step and she was trained as she described. To correct re-train employees on proper dishwashing, and monitor and ensure employees are following proper dishwashing procedure.

(Critical) Asked employees to describe how utensils are washed, employees stated they pre-rinse/scrub utensils, wash and scrub with soap/detergent and rinse utensils. Corrected by educating employees that utensils are to washed with soapy water, rinsed with clean water, and sanitized with a sanitizing solution. Management has been instructed to monitor and re-train employees on properly washing utensils, and ensure utensils are sanitized after rinsing.

(Critical) Asked employee to demonstrate using thermometer to take hot holding temperatures and observe employee attempt to take temperature of hot dog without sanitizing thermometer (stopped employee before thermometer touched hot dog). Employee corrected by sanitizing thermometer, then took temperature. Note: management needs to train/retrain all new and old employees on food safety practices.
