(Critical) No sanitizer test kit available at food cart for monitoring sanitizer concentration in sanitizer spray bottle. Corrected at time of inspection by obtaining a proper quat test kit from the kitchen to be used at the cart. Please monitor your sanitizer concentration throughout the day to assure proper level.

(Critical) Observed open cup in kitchen prep area. Food employees may drink from closed beverage containers. Critical corrected: at time of inspection open cup removed; closed beverage container provided. Cup should be handled properly to eliminate potential contamination.

Food employee observed with jewelry on hands and arms. With exception of plain ring, while preparing food, food employees shall not wear jewelry on their arms and hands

(Critical) Raw eggs stored improperly in kitchen wic and mobile unit reach-in-cooler. Please store raw eggs below and away from any ready-to-eat food items. Critical corrected: at time of inspection relocated raw egss to bottom shelf in wic and to bottom shelf in reach-in-cooler

(Critical) Pooled eggs found at improper temperature at cart next to grill. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Critical corrected: at time of inspection discarded pooled eggs found at 50°F. Facility is using a chill pan to store pooled eggs that is frozen from the previous evening. Breakfast serve period from 8 am - 12 pm. Pooled eggs will maintain at 41°F or below at all times. Facility will keep pooled eggs refrigerated (maintaining at 41°F or below) except when busy (in use eggs) and will switch out pan and utensil half way through the serve period. Facilty considering using time as a public health control. Please submit written time as a public health control policy to al hauck for review
