Set-up sanitizer compartment with chlorine sanitizer at proper concentration. Please discontinue using third sink (sanitizer sink) for drain board.

Please re-establish air gap at ice bin drain line front counter. The air gap shall be twice the pipe diameter above the flood rim of the drain. Consider cutting drain line to provide permanent air gap; currently using twist ties and string. Disconnect ice cream dipper well drain line from ice bin; dipper well not in use.
Please provide copy of certified manager certificate within 90 days. Employees having difficult time passing exam due to language barrier. Have attempted 3 times to pass exam. Will discuss with supervisor

These areas in need of cleaning: floors under cooking equipment, floor/wall juncture in some areas, wall behind slicer and exterior oil containr on shelf behind slicer. Please clean now and place on routine cleaning schedule
