(Critical) Sliced tomatoes were found dated past the maximum use by date of 7 days. (8 days out from today, and they weren't sliced today). Cut tomatoes are a potentially hazardous item, thus they must be dated with a 7 day use by date(add 6 days to date cut). Corrected by discarding and through education.

(Critical) The soft serve creams are not being date marked. You need to be sure staff are marking the containers of cream with a 7 day maximum use by date to break the cycle on the creams. Also, effective october 1, 2012, cut tomatoes and cut lettuce must be date marked. Be sure staff are dating containers these items are stored in. I will be back in 2 weeks to verify you are properly date marking all of these items. (milk was dated 5/27). . . Get staff into current month awareness.

(Critical) Last year, i cited you to install a paper towel dispenser in the restroom. This still has not been done. I will be back in 2 weeks to verify you have installed one on the wall.

(Critical) Your hot water is at 96*f. It must be a minimum of 110* f for warewashing in the 3 comp sink. Have hot water adjusted so it is above 110*f. I will be back in 2 weeks to verify this.

This facility does not have a mop/service sink. The new food code that michigan adopted last october requires all facilities have a mop sink. If there is not room to install a mop sink, a written variance must be requested. I will bring you a template of how to write up the variance request on my follow up inspection. You will need to e-mail me the variance request by july 30, 2013.

(Critical) I observed 2 unlabelled spray bottles. Staff need to label bottles with common name of content. Corrected by labelling.

(Critical) Both the chili and the bbq beef was found at unsafe temps. (130*f). Must be holding at 135*f or greater. Staff added water after heating product, which cooled it back down. Corrected by heating in microwave to 160*f.

(Critical) 2 opened cans of whipped cream and an opened gallon of milk were not date marked. Staff must be date marking these products. Corrected by doing such.

Repair the leaks on the 3 comp sink faucet.

You need to put up a paper towel dispenser in the restroom and keep stocked. Paper towel roll on top of toilet is not sanitary.

Mop bucket was not emptied and mop not hung up from night before. Be sure you correct this action.

I observed the ice scoop handle in contact with the ice. I want you to keep the ice scoop outside of the ice bin between uses.

(Critical) The bbq pork was not re-heated to >165*f in less than 2 hours. I found it at 131*f-140*f after heating for ~2 hrs. Develop a written sop for re-heating your hot items in the microwave before stocking in hot hold wells. Corrected by further heating to >165*f in the microwave.

Please replace the damaged and loose tiles under the 3 comp sink and by the exit door.

Provide a thermometer inside your front reach in cooler.

(Critical) Milk was left out of refrigeration for a time and found at 52*f. Must be held at 41*f or less, therefore staff need to return to the cooler after each use. Corrected through behavior modification and discarding the milk.

No soap stocked in the dispenser in the restroom. Staff must always keep stocked.

You need to provide a metal stemmed thermometer rated 0*-220*f so you can check cold temps. The one you have has a minimum 50*f reading.

Shake cups were stored in stagnant water between uses. You must have running water on in this well when in use. Corrected by turning on water.
