(Critical) The auto dishmachine is not effectively sanitizing. The dishmachine does not go through a sanitize cycle. Do not use this unit to wash dishes. Sanitize everything manually in 3 comp sink until repaired. Staff need to use test papers everyday before using machine to assure working properly. I will be back in 2 weeks to verify it's working.

(Critical) I observed a tray of chicken patties sitting on a speed rack at 67*f. You need to keep this and all potentially hazardous foods at 41*f or less at all time until cooking, therefore keep in cooler or frrezer. Corrected by discarding this batch and changing prodedures.

(Critical) I found yogurt at 51 degrees f. Stored inside a cold holding unit. The yogurt is a part of a lunch. As discussed at the time of inspection, do not store potentially hazardous food (phf) items in this cold holding unit, over night. Once lunch service is over, take them to the walk-in refrigerator. Corrected at the time of inspection. The yogurt has been relocated as directed.
