At the main cook line observed the ventilation filters with a heavy accumulation of grease and grime. Correct by cleaning now and on a more frequent basis.
(Critical) At the handsink by the cook line, on two separate occasions observed on a food worker using the sink for culinary purposes. Item corrected during inspection by pic educating the worker on proper use of the sink.
(Critical) At the m3 turbo air reach in cooler observed raw shell eggs stored above ready to eat tea and milk. Raw animal products shall be stored below and away from ready to eat products to reduce the potential for cross contamination of rte foods with harmful pathogens. Observed the following improper storage of in use utensils: 1. At the main make area across from the prep area observed several service utensils stored in stagnet water. 2. At the ice machine ice bin observed two ice scoops stored in the ice. Ice scoops shall be stored on a clean surface such as the purpose built scoop holder inside the machine or another clean surface pic corrected item during inspection by relocating the ice scoop. Correct by storing the utensils as outlined above
In the basement observed open boxes of single service cups and lids stored underneath unshielded sewer lines. Correct by providing approved protection for the sewer lines
In the basement observed several fluorescent light fixtures with unprotected light bulbs. Correct by providing approved shielding for the bulbs
