(Critical) Observed trash can and cardboard stored in front of handsink in dishwashing area. All handsinks must be fully accessible at all times for proper employee handwashing. (Critical) Observed facility not washing pans and equipment properly as i observed the wash water temperature in 3 compt sink at 100-102f. To correct, need to change wash water more often and maintain wash water temperature at 110f per your approved proper warewashing procedures. All pans and utensils must be sanitized as per specified concentration on chemical bottle and per manufacturers directions (in this case 150-400ppm of quat). Pic corrected by remixing sanitizer to 200ppm of quat at time of inspection. Violation corrected.

Observed 0 ppm of quat in wiping cloth buckets in front and back prep area. All wet wiping cloths must be stored in approved sanitizer concentration (150-400ppm of quat) at all times to help prevent the accumulation of bacteria on wiping cloths.

Observed interior of microwave oven in front prep area with an accumulation of debris. To correct, please clean now and on a more frequent schedule
