(Critical) Observed narrow neck glass bottles in ric in bar area. Facility utilizes narrow neck bottles for storing bar mixes and juices, but does not have an effective way to clean interior of bottles (staff currently utilizing a shake/rinse method and dishmachine to clean interior). If wanting to utilize narrow neck bottles in your facility, need to obtain bottle brushes and manually wash bottles before they are placed in dishmachine as needed. I will check on this item at follow up inspection. Correct within 10 days. ,

(Critical) Observed squeeze bottle of housemade cajun hollandaise sauce in pan of lukewarm water (100f) on counter in prep area with internal food temperature of 95f (sauce has been on counter less than 30 minutes per pic). Cannot store phf in lukewarm water. All phf must be hot held at 135 or more at all times. Pic corrected by reheating hollandaise sauce and placing sauce in tabletop warmer at time of inspection. Violation corrected , observed pan of housemade rte lemon butter (butter and lemon juice) stored in pan of lukewarm water (100f) on counter in prep area. Internal food temp of butter was 95f (butter was freshly made 30 minutes ago per pic). Pic worried that housemade butter will melt if kept in hot holding unit. Staff pulled recipe card at time of inspection. . . Per recipe card "lemon butter to be kept at room temperature or in hot holding unit. " all potentially hazardous housemade sauces and dressings must be kept hot (135f or more) or cold (41f or below) at all times. If wanting to keep lemon butter at room temperature, please provide food testing and food safety information from corporate office showing food characteristics (acidity, moisture content, etc. . . ); otherwise, lemon butter must be kept in hot holding unit as per recipe card. (Critical) Observed no test strips in facility to measure sanitizer concentration in bar 3 compt sink. To correct, please obtain proper chlorine test strips as soon as possible. I will check on this item at follow up inspection. Correct within 10 days. ,

Observed clean equipment (potato slicer, clean equipment and utensils) stored in utensil bin that had an accumulation of stagnant water on clean dishware rack across from 3 compt sink. All clean equipment must be stored in a clean, dry area and not exposed to potential sources of contamination
