Observed several clean plates and pans on clean dishware shelf in dishwashing area stored with food contact portion of plate/pan up. All plates and pans must be stored inverted when not in use to to protect from potential sources of contamination. , observed in-use knife stored in between 2 pieces of equipment on main prep line. All utensils must be stored in a clean, dry area and not exposed to potential sources of contamination. To correct, please relocate knife to approved location as soon as possible

Observed plastic bowl and plastic scoop laying on top of sugar in bulk food bin in upstairs back kitchen area (scoop handle touching food item). Plastic bowls are not approved scooping utensils as they are a source of potential contamination (from employee hands). Also, all scoops must be stored so the handle extends up and out of food product (again, to protect food from potential contamination).

Observed 2 wet mops stored in bottom of mop sink. All mops must be hung up after use to allow for proper air drying

Observed floor under upstairs ice machine in dishwashing area with an accumulation of debris. To correct, please clean now and on a more frequent schedule

Observed handsink in cooking area not completely sealed to wall (caulking is broken). To correct, please re-seal/re-caulk handsink to wall as soon as possible
