All raw animal products must be stored below and away from all rte food items at all times to help prevent potential cross contamination. Pic corrected by relocating eggs to another shelf away from beverage shelf at time of inspection. Violation corrected. , observed 2 containers of raw ground beef stored directly above case of raw whole muscle beef in wic. When storing raw meats, need to place foods with higher cooking temperatures below foods that have shorter cooking temperatures. In this case, the the raw ground beef has a cooking temp of 155f or more so it needs to be located below the whole muscle beef (which has a cooking temp of 145f).
