Pic states they will only place a single layer of portions cups in the top portion of cooler so it will hold at 41°F. Violation corrected.

Found rte, tcs food- tamales, guacamole, salsas with 8 day datemarks or no datemarks in the walk in cooler. Found a container of horchata in the kitchen 1 door reach in cooler without 7 day datemark. Pic corrected by discarding rice pudding, and provided 7 day datemarks for all other rte, tcs food. Pic has been instructed to monitor and ensure all rte, tcs food is dated with at least 7 day datemarks. ,

Observed employee working in the cooking/prep area not wearing hat. To correct provide hat and remind employees to wear them.
Found single use utensils in the self service area soiled in containers mixed and jumbled. To correct store utensils with handles in one direction to minimize contamination.
Found light in the walk in cooler not working. To correct repair/replace light.
Found long handled spoons used to dispense food stored on a wet towel on prep table next to hot holding unit. To correct either store spoons in each container on hot holding unit or on a clean surface.
Found employee using a pot with oil on range top as fryer. To correct discontinue using pot of oil as fryer and replace with a commercial grade fryer that fits under hood. Found facility using a house hold, 3 well hot holding unit on the prep table. Pic states they are temporarily using this unit, until commercial grade unit arrives. To correct replace house hold hot holding unit with a commercial grade hot hold well as soon as possible.
Found the hood filters soiled with greasy build up. To correct clean hood filters and clean on a more frequent schedule.
Found light shield above prep table by the walk in cooler cracked and chipping. To correct repair/replace light shield.
